2/3 c Sugar
6 oz Chocolate chips
In small mixing bowl; beat eggs. Add sugar after eggs are "more than foamy"-they should be light and fluffy. Beat for 8 minutes. Fold in chips. Drop by tbsp onto greased cookie sheet. TURN OVEN OFF, leave overnight. The kids love them! Formatted by Elaine Radis; 3/92 -----

Chewy Chocolate Chocolate Chip Meringue Cookies
Who doesn't love a chewy cookie, and who doesn't love chocolate?
This recipe for chewy chocolate chocolate chip meringue cookies gives you both, and it's super easy to make!
Bonus: it's naturally a gluten-free recipe!
Equipment:
Electric hand or stand mixer
Spatula
Microwave-safe bowl
Large mixing bowl
Cookie/baking sheets
Silicone mat or parchment paper
Ingredients:
2 large egg whites
1/4 c sugar
1/8 tsp vinegar (or lemonjuice or cream of tartar)
1/2 tsp vanilla extract
pinch of salt
6 oz (170 g) semisweet chocolate
1/2 c chocolate chips (milk chocolate or semi-sweet)
Recipe:
Preheat oven to 350 degrees F (177 C)
Line one large baking sheet or two baking sheets with parchment paper or silicone baking mat
Break chocolate into small pieces and microwave in 20-second intervals until melted
In the large mixing bowl, beat egg whites, lemon juice, vanilla, pinch of salt until soft peaks
Gradually add sugar and beat until stiff peaks
Add melted chocolate and chocolate chips into egg white mixture
Gently fold just until combined, do not over mix
Spoon batter onto prepared baking sheet(s)
Bake for 8-10 minutes, or until cookies look dry on the outside but still soft on the inside when you press down on them
Allow to cool for a few minutes on the baking sheets before placing on a wire cooling rack to finish cooling
Store in an airtight container
