You guys asked for it, so here it is. Makhni Sauce Master Gravy, a recipe very often requested by viewers, but seldom revealed by chefs, but in this video Head Chef Phool Prasad kindly shows us his full recipe making process for making Makhni Sauce Master Gravy.
MAKHNI SAUCE (MASTER GRAVY) RECIPE INGREDIENTS:
* Boiled & peeled Tomatoes
* Fresh Green Chillies
* Fresh Green Coriander
* Fresh Ginger
* Fresh Garlic
* Vegetable Oil
* Deggi Mirch (Mild Chilli Powder)
* Cinnamon Sticks
* Dry Bay Leaves
* Cloves
* Green Cardamom
* Mace
* Black Cardamom
* Salt
* Sugar
As the mixture stars boiling in the pan, it will increase in volume, so be sure to use a large enough cooking pot to prevent it from spilling out.
Please note that the above gravy is a tomato based gravy (which by itself is quite tangy) in the restaurant it's used alongside an Onion Masala (made using Onion & Tomato, Ginger & Garlic, homemade Garam Masala).
After making the Makhni Sauce (which is vegan), Chef Phool Prasad shares his recipe for making Chana Masala using the freshly prepared Makhni Sauce.

CHILLI PANEER
Preparation Time: 15 minutes
Cooking Time: 20 minutes
Serves: 2
Ingredients :-
For Batter
2 tbsp refined flour
1 tbsp corn starch
A pinch of Salt
¼ cup water
1 tbsp corn starch (for Coating paneer)
250 gms Paneer, cut in cubes
Oil to deep fry
For Chilli Paneer Sauce
1 tbsp oil
1 tbsp ginger, finely chopped
1 tbsp garlic, finely chopped
2 dry red chilli, roughly chopped
1 tbsp celery, chopped
1 medium onion, cut in quarters
1 small capsicum, cut in cubes
1 tbsp soy sauce
2 fresh red & green chilli, sliced
1 tbsp green chilli sauce
1 tbsp Sweet & Sour sauce
1 tsp sugar
1 tbsp corn flour slurry (corn flour + water mixed)
Handful of spring onion, sliced (white with Green part)
Garnish:-
Spring onions, chopped
Toasted sesame seeds
Process:-
• For Coating paneer add refined flour, corn flour, salt and water to a bowl, mix well and set aside till in use.
• Add the corn starch to the paneer cubes and coat well, pour over the prepared batter and mix well coating all the paneer cubes evenly.
• Deep fry the coated paneer cubes till light golden, drain on absorbent paper. Set aside till in use.
• Heat oil in a pan, add ginger, garlic, whole red chilli and celery. Mix well and sauté for a few minutes.
• Add onions and capsicum, sauté till onions are fragrant.
• Add soy sauce and toss well to coat. Add fresh red and green chillies, sauté for a few seconds.
• Add green chilli sauce, sweet & sour sauce, mix and toss well.
• Add little water, sugar and cook till it melts.
• Add some more water and the corn flour slurry, cook till the sauce thickens.
• Add the fried paneer cubes and spring onions, toss well.
• Garnish with spring onions and toasted sesame seeds.
• Serve immediately.

PANEER CRISPY

Ingredients
For Marination
400 gms Paneer, cut into medium size, पनीर
Salt to taste, नमक स्वादअनुसार
2 tsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
1 ½ tsp toasted Sesame seeds, सफेद तिल
1 ½ tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
¼ cup Cornflour, कॉर्नफ्लोर
For Batter
1 tbsp Cornstarch, कॉर्नस्टार्च
½ cup Refined flour, मैदा
¼ tsp Baking soda, बेकिंग सोडा
A pinch of salt, नमक
1 cup Water, पानी
1 tbsp Cornstarch, कॉर्नस्टार्च
Oil for frying, तेल तलने के लिए
For Paste
½ inch Ginger, peeled, slice, अदरक
4-5 Garlic cloves, लहसुन
For Sauce
2 tsp Oil, तेल
Prepared Ginger Garlic paste, अदरक लहसुन का पेस्ट
1 tsp toasted Sesame seeds, सफेद तिल
2 tsp Schezwan sauce, शेज़वान सॉस
2 Dry red chillies, broken into half, सूखी लाल मिर्च
2 tbsp Water, पानी
2 tbsp Tomato ketchup, टाॅमेटो केचप
1 tsp Red chilli sauce, (optional) रेड चिली सॉस
¼ tsp Soy sauce, सोया सॉस
Water, पानी
½ tsp Sugar, चीनी
Salt to taste, नमक स्वादअनुसार
Fried Paneer, तला हुआ पनीर
½ tsp toasted Sesame seeds, सफेद तिल
1 tbsp Spring onion, chopped, प्याज़ पत्ता
For Tempering
1 tsp Oil, तेल
2 Garlic cloves, chopped, लहसुन
1 Green chilli, chopped, हरी मिर्च
Fried Paneer, तला हुआ पनीर
½ tbsp tender Coriander stem, chopped, धनिया के डंठल
A pinch of degi red chilli powder, देगी लाल मिर्च पाउडर
For Garnish
Tempura trimmings, टेम्पुरा ट्रिमिंग्स
Spring onions, chopped, प्याज़ पत्ता
A pinch of degi red chilli powder, देगी लाल मिर्च पाउडर
Process
For Marination
In a bowl, add paneer, salt to taste, ginger garlic paste, toasted sesame seeds, degi red chili powder and mix everything well.
Add corn flour or arrowroot powder and mix it well and keep it aside for further use.
For Batter
In a bowl, add cornstarch, refined flour, baking soda, salt, water and mix everything well.
Make sure there's no lumps, keep aside for further use.
For Frying
Heat oil in a kadai on medium flame, once the oil is medium hot.
Dip the first marinated paneer into the batter and coat it well.
Dip into the hot oil and fry on medium to low flame.
Remove in an absorbent paper and keep it aside for further use.
Fry them again so that it turns evenly crisp and golden in color.
Drain them in an absorbent paper to remove excess oil.
Drizzle the remaining batter into the hot oil and deep fry on medium flame until golden in color and crisp.
Remove in an absorbent paper and keep it aside for further use.
For Paste
In a mortar pestle, add ginger, garlic and and make a rough paste of it and keep aside for further use.
For Sauce
In a deep kadai or wok, add oil, prepared ginger garlic paste and saute well.
Add toasted sesame seeds, schezwan sauce, dry red chillies and mix it well.
Add little water, tomato ketchup, red chilli sauce, soy sauce and water mix everything well on medium flame.
Add sugar, salt to taste, fried paneer and toss everything well.
Finish it with toasted sesame seeds, spring onion.
Garnish with tempura trimming and serve hot.
For Tempering
Heat oil in a wok, add garlic, green chilli and saute it well.
Add fred paneer, tender coriander stem, degi red chilli and toss everything well.
Garnish with spring onion and serve hot.
