How To make Butternut Squash Pasta
1 sm Butternut squash
1 3/4 c All purpose flour
1 ts Hazelnut butter
1 pn Black pepper
1 pn Nutmeg
1 pn Garlic powder
Preheat oven to 350F. Cut squash into quarters, remove seeds & place in a baking dish with 1/2 c water. Cover & bake til ltender (50 to 60 minutes). Let cool
& mash flesh. Set aside. In a large bowl, combine 3/4 c squash with remaining ingredients to form a soft dough. Turn out onto a floured board & knead until smooth & pliable like a firm bread dough. Place in a bowl, cover with plastic wrap & let rest for at least 30 minutes. Shape & cook dough as desired.

My butternut squash fettuccine goes perfectly with this time of year. Its comforting , delightful, and super easy to make. It is the best pasta sauce. Its vegetable base shares similar ingredients to an alfredo sauce giving our vegetable sauce a delightful and similar flavor to a creamy alfredo sauce. The difference is our butternut squash is a vegetable and naturally creamy, so it is way better for us then all the cream in the alfredo sauce. This is THE BEST BUTTERNUT SQUASH RECIPE EVER!!! Whats not to love?
Recipe butternut squash fettuccine
1 (medium size) ea or 1 lb of butternut squash
2 ea garlic cloves
3 ea basil leaves
4 TBSP butter
3 cups chicken stock
1/2 an onion
1/2 cup half and half
8 oz uncooked fettuccine
Salt ans pepper to taste
Toppings: Chili flakes, parmesan cheese and basil.

CREAMY ONE POT BUTTERNUT SQUASH PASTA
Ingredients
* 2 tablespoons olive oil
* 4 cloves garlic minced
* 1 teaspoon fresh thyme
* ½ teaspoon red pepper flakes
* salt and pepper
* 5 cups chopped butternut squash approximately one small squash
* 1 ½ cups chicken stock or vegetable stock
* 500 gram box Barilla Penne Rigate pasta
* 1 cup heavy cream or half and half
* ½ cup grated parmesan cheese
* fresh thyme shredded parmesan, and red pepper flakes for garnish/serving
Instructions
* Heat a large, deep skillet over medium heat.
* Add the olive oil, garlic, thyme and red pepper flakes, and saute until fragrant.
* Add the chopped butternut squash and stir until coated.
* Add the chicken stock and cover. Let simmer for about 15-20 minutes, or until the butternut squash is soft.
* Meanwhile, set a large pot of salted water to boil and cook pasta according to package directions.
* When the butternut squash is soft, turn off the heat under the skillet and allow it to sit uncovered for a few minutes.
* Add the cream and parmesan, stir well, and puree with an immersion blender until the sauce is silky smooth (using a regular blender works too!)
* Drain the pasta and add it into the skillet , tossing it well in the sauce to coat.
* Sprinkle the top with some more freshly shredded parmesan, few sprigs of fresh thyme, and additional red pepper flakes, if desired.
* Serve immediately.
