• 1 large butternut squash
• 2 tablespoons olive oil
• 2 cloves garlic minced
• 1 teaspoon salt
• 1 teaspoon black pepper

1️⃣ Preheat oven to 400 degrees Fahrenheit.
2️⃣ 00:00:13 - Use a fork to prick holes in the skin of the butternut squash. Microwave for 3 minutes on high, then let cool until you can easily handle.
3️⃣ 00:00:36 - Peel, seed, and cut squash into 1-inch cubes.
4️⃣ 00:01:20 - Place squash into a large mixing bowl and toss with olive oil, garlic, salt, and pepper.

2️⃣ Use a vegetable peeler to remove the peel.
3️⃣ 00:00:36 - Cut the butternut squash in half, lengthwise to split the butter nut squash open. Each piece will have the long, skinnier neck, and the bell shape at the bottom.
4️⃣ 00:00:50 - Scrape out seeds from the bell portion and discard.
5️⃣ 00:00:55 - Cut each piece to separate the neck from the bell.
6️⃣ 00:01:01 - Dice the squash into 1-inch cubes.

For yeast mixture
1 cup fresh milk or water
1 tbsp sugar
1 1/2 tbsp instant yeast
Dough
yeast mixture
3 1/2 cup all purpose flou
2 large eggs
1/4 cup melted or softened butter
1/2 tsp salt
1/3 cup sugar
Filling
2 cups mashed squash
2 tbsp sugar
1 tsp vanilla
Eggwash
1 egg
2 tsp milk

Butternut Squash Bread Recipe
Had a few requests for this recipe. It takes a bit of planning to roast the squash ahead of time, but once that's done, it's really easy to put everything together and it becomes breakfast for the whole week! Roasting the butternut squash brings out the natural sugars, allowing for less sugar that's needed compared to other dense breads. The walnuts and pumpkin seeds also helps to provide a steady source of energy all morning. Goes great with coffee!
Hearty Butternut Squash Bread with Walnuts & Pumpkin Seeds
Full Recipe:
WET INGREDIENTS
8 oz Brown Sugar
3/4 cups vegetable oil
3 eggs
1 tsp vanilla
1-1.5 cups of roasted butternut squash
DRY INGREDIENTS
10 oz all purpose flour
1 tsp baking soda
1/4 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
2 pinches of cardamom
5 oz walnuts
handful of pumpkin seeds
Bake at 325 degrees for 1 hr & 15 minutes+/- 5-10 minutes
