How To make Butternut Squash Bread
2 pk Active dry yeast
1/2 c Warm water; (110 - 115 degre
1 1/4 c Mashed cooked butternut squa
1 c Warm milk; (110 - 115 degree
2 Eggs; beaten
1/3 c Butter or margarine; melted
1/3 c Sugar
1 ts Salt
7 c All-purpose flour; 7 to 7-1/
Recipe by: TASTE OF HOME - OCT/NOV 95 In a mixing bowl, dissolve yeast in water; let stand for 5 min. Add squash, milk, eggs, butter, sugar and salt; mix well. Gradually add 3-1/2 cups flour; beat until smooth. Add enough remaining flour to form a soft dough. Turn onto a floured board; knead until smooth and elastic, about 6-8 min. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. Punch dough down. Shape into three loaves; place in greased 8x4x2" loaf pans. Cover and let rise until doubled, about 30 min. Bake at 375 degrees for 25-30 minutes or until tops are golden. Remove from pans to cool on wire -----

Ingredients
1 ¾ cups (220 g) all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
¼ teaspoon ground nutmeg
¼ teaspoon ground cloves
¼ teaspoon ground ginger
1 ½ teaspoons ground cinnamon
½ cup (120 mL) (120 mL) canola oil
¾ cup (150 g) granulated white sugar
½ cup (107 g) packed light brown sugar
2 large eggs room temperature
1 ½ cups (341 g) butternut squash puree
¼ cup (60 mL) orange juice (or water)
Instructions
1. Preheat and prepare pan. Preheat oven to 350°F. Spray a 9×5” loaf pan with non-stick cooking spray or grease with butter and set aside.
2. Combine dry ingredients. In a mixing bowl, whisk together flour, baking soda, salt, nutmeg, cloves, ginger and cinnamon.
3. Combine wet ingredients. In the same mixing bowl whisk together oil, sugars, eggs, squash, and water until combined.
4. Combine wet and dry ingredients. Add the dry ingredients to the wet ingredients and mix together with a spatula until just combined.
5. Bake. Pour the batter into the prepared loaf pan and bake for 60-65 minutes until a toothpick inserted in the center of the bread comes out clean. Remove from the oven and allow the bread to cool completely in the pan set on a wire cooling rack.
6. Storage: Store the bread, and any leftovers, covered at room temperature for 2 days, or in the refrigerator for up to 1 week.

No Oven Butternut Squash Bread Loaf
Easy and energy efficient way to make Butternut Squash Bread Loaf without an oven. All you need is a steamer.
Ingredients:
300g or 2-1/2 cups Bread Flour
180g or 6.35oz Mashed Butternut Squash (steamed)
1/2 Teaspoon Salt
1 Teaspoon Yeast
50g or 1.76oz Condensed Milk
10g or 0.35oz Milk
Butternut Squash Bread with Prunes
This festive holiday bread will be made with California prunes and butternut squash as the stars of the show. It is a nutritious breakfast or snack that brings both fruits and veggies to the table in a delicious way. The prune puree decreases the oil needed in this recipe, and it also substitutes the added sugar completely. The flavors are complemented with other holiday ingredients like cinnamon and walnuts. The bread will also have prune pieces throughout for a nice texture. Plus, the base is part flour and part oats for added fiber and nutrients. This bread provides at least 3g of fiber per serving. I'll also show how to bake a large loaf, and then smaller loaves to wrap and gift to family and friends for the holidays.
