I really love chicken wings, I love making them and I love eating them in a very messy and ritualistic manner. Give these grilled chicken wings a try and you wont go back to the messy deep fried chicken wing method.
Chicken wings and brine.
5 lbs chicken wings
2 21/2 cups buttermilk
1 cup dill pickle juice
1 cup franks red hot original
Spice Rub:
1/2 cup blackening seasoning of choice
3 tbsp onion powder
1 tsp garlic powder
1/2 tsp cayenne pepper
1 1/2 tsp black pepper
Wing Sauce:
1 1/2 cups franks red hot original
1 stick 4 oz cold unsalted butter
2 1/2 tbsp honey
pepper to taste
Blue cheese dip
5 oz blue cheese
3/4 cup sour cream
3/4 cup mayo
1/4 cup buttermilk
1 lemon juiced
1/2 tbsp Worcestershire sauce
Salt and pepper to taste
Fancy pants ranch
1 cup mayonnaise
1 cup buttermilk
1 packet hidden valley buttermilk version
2 tbsp fresh chives
2 tbsp fresh dill

What goes with hot wings or buffalo wings? Blue Cheese sauce is the answer. Finding the best recipe out there can be a hard task, so let me take the hard work out for you and just show you how to make my version, which I feel is the best. Well I've had no complaints so far, five out five stars from anyone who has tried it.

¼ of a cup of mayonnaise
¼ of a cup of sour cream
1 clove of crushed garlic
1 tablespoon of lemon juice

Buffalo chicken wings are one of my favourite dishes, and it's hard to beat them. In this recipe, ill give you the secret to achieving the best flavour and crispy shell using one simple trick. Please enjoy.
Ingredients -
1.6kg (3.5lbs) - Chicken Wings, Drums & Flats Separated
Salt To Coat Lightly
Sunflower or Vegetable Oil For Frying
Buffalo Sauce -
100g (3.5oz) - Unsalted Butter
2 Bottles (300ml) - Frank's Hot Sauce
2 - Garlic Cloves, Crushed
1 Tbsp (20g) - Honey
Blue Cheese Dip -
4 Tbsp (110g) - Mayonnaise
2 Tbsp (60g) - Sour Cream
1 1/2 Tbsp (30ml) - Buttermilk
1 - Garlic Clove, Minced
1/4 tsp (0.5g) - Yellow Mustard Powder
50g (1.7oz) - Blue Cheese, Grated or Crumbled

Thermapen | Grilled Buffalo Chicken Wings with Blue Cheese Sauce
If you like your wings saucy you’re going to love these grilled buffalo chicken wings. Coated in a thick layer of spicy, creamy buffalo sauce and served with a mouthwatering blue cheese dip, these will absolutely knock your guests socks off (if you can bear to share them).
Chicken is safe to eat at 74°C but it can still look a little pink around the bone at this temperature. To avoid pink meat, you can take the wings up to 81 – 90°C on your Thermapen and they will still be perfectly tender and fall off the bone.
