How To make Apricots In Brandy
-Virginia Housewife, 1831 "Take freshly gathered Apricots not too ripe; to Half their Weight of loaf Sugar, add as much Water as will cover the Fruit; boil and skim it: then put in the Apricots, and let them remain five or six Minutes; take them up without Syruup, and ;ay them on Dishes to cool; boil the Syrup till reduced one Half; when the Apricots are cold, put them in Bottles, and cover them with equal Quantities of syrup and French Brandy. If the Apricots be clingstone, they will require more scalding." Source: Mrs. Mary Randolph's Virginia Housewife, 1831 Posted on Cooking Echo by Karl Lembke on 12-26-92 MM by Cathy Svitek

BOSTON COCKTAIL RECIPE - Must Try Apricot Brandy Liqueur Drink!
The Boston cocktail is a citrusy and tart gin-based cocktail with underlying and lingering apricot stone fruit flavours. It's a great drink to showcase your chosen apricot brandy. Note that the recipe may need adjusting depending on the chosen apricot brandy (liqueur) as they will vary in sweetness.

It's time to make an apricot vodka! But I wasn't sure what technique to use to get the apricot flavor into the vodka. So I decided to try using a bunch of them. Perhaps we can learn a little about the techniques and end up with a tasty beverage.

Part 1 - Making Apricot Brandy
This is the easiest and most delicious way to use extra fruit - especially Apricots, and that is to make Homemade Brandy! This recipe comes from my Grandma and I estimate it to be approx 60 years old. Here it is:
Apricot Brandy
2 cups Apricots, include halved apricots, with pits and skins
2 cups sugar
1 quart Vodka
Put in a food grade container, stir once and then cover and put in a dark cook place for one month. Strain and enjoy!
