Ingredients crust
- 150g flour
- 2 tbsp sugar
- 2g salt
- 120g cold butter (unsalted)
- 4 tbsp ice-cold water
Ingredients topping
- 100g brown sugar
- 100g flour
- pinch ground nutmeg
- pinch salt
- 90g melted butter (unsalted)
- 1 tsp vanilla extract
Ingredients filling
- 10 granny smith apples, peeled and sliced
- 20g melted butter (unsalted)
- juice of a lemon
- 100g sugar
- 1/2 teaspoon ground cinnamon
Method
1. For the crust, add the flour, sugar, salt and ice-cold cubed butter to the food processor
2. Pulse the blade until you have reached a sandy consistency, then slowly add 1 tbsp of ice-cold water at a time until the dough comes together.
3. Remove and cover with cling film and rest in the fridge for at least 1 hour.
4. Take a 20cm springform cake tin and grease it lightly, remove the dough from the fridge and roll it out big enough to fill the tin.
5. Once you have lined your tin, place baking paper and pie weights into the pastry-lined tin and then into the freezer for 15 minutes before you bake at 190°c for 15 minutes.
6. Remove from the oven and take out the pie weights then turn the oven down to 180°c and bake for another 15 minutes, then let the pie crust cool completely.
7. For the topping, simply add all your dry ingredients to a stand mixer on medium speed. Slowly pour the melted butter in, when it starts to clump into small pebbles it's ready.
8. Take the sliced apples and mix them with the butter, lemon juice, sugar and cinnamon.
9. Add the mixed apples to the baked pie crust, you want the apples to come all the way to the top, maybe slightly more.
10. Sprinkle over the topping and bake at 180°c for 45 minutes.
11. Let it cool for at least an hour before you try and slice.

Easy Skillet Apple Pie ( Southern Living)
Ingredients:
2 pounds Granny Smith apples
2 pounds Braeburn apples
1 tsp ground cinnamon
3/4 cup granulated sugar
1/2 cup butter
1 cup light brown sugar
1 package refrigerated piecrust (14.1 oz)
1 egg white
2 tbsp granulated sugar
Bake at 350F for 1 hour to 1 hour and 10 minutes or until golden brown or bubbly.
In the video, I used honey crisp apples , Granny Smith and some fuji apples.
The 2 tbsp sugar is used to sprinkle after brushing the top of the pie crust with egg white but I only used less than a tablespoon

Makes 1 9-inch pie
Ingredients
Pie Dough
2 ½ cups (375 g) all-purpose flour
1 Tbsp (12 g) sugar
1 tsp (5 g) salt
3 Tbsp (45 ml) vegetable oil
1 cup (225 g) cool unsalted butter, cut into pieces (does not have to be ice cold)
¼ cup (60 ml) cool water
2 tsp (10 ml) white vinegar or lemon juice
Mincemeat Filling
2 medium apples, peeled and coarsely grated
1 cup (150 g) golden or Thompson raisins
1 cup (160 g) dried currants
½ cup (70 g) dried cranberries
¼ cup (40 g) finely diced candied ginger
½ cup (100 g) packed dark brown sugar
1/3 cup (80 ml) honey
¼ cup (60 ml) brandy, optional
1 Tbsp (6 g) finely grated orange zest
2 tsp (4 g) finely grated lemon zest
2 Tbsp (30 ml) lemon juice
½ tsp (2 g) ground allspice
½ tsp (2 g) ground nutmeg
¼ tsp (1 g) ground clove
¼ cup (60 g) unsalted butter, melted
1 egg mixed with 2 Tbsp (30 ml) water, for brushing
Turbinado or granulated sugar, for sprinkling
Directions
1. Combine the flour, sugar and salt together. Add the oil and blend in using a pastry cutter, electric beaters or a mixer fitted with the paddle attachment, until the flour looks evenly crumbly in texture.
2. Add the butter and cut in until rough and crumbly but small pieces of butter are still visible. Stir the water and vinegar (or lemon juice, if using) together and add all at once to the flour mixture, mixing just until the dough comes together. Shape the dough into 2 disks, wrap and chill until firm, at least an hour.
3. Toss the grated apple, raisins, currants, dried cranberries and candied ginger with the brown sugar, honey, brandy, lemon juice, orange and lemon zests and spices. Cover and chill for at least 2 hours, up to 24 hours.
4. Preheat the oven to 400 F (205 C). Pull out the dough from the fridge 15-30 minutes before rolling. On a lightly floured surface, roll out the first disk of dough into a circle just less than ¼-inch thick. Dust a 9-inch pie plate with flour and line the plate with the pastry. Trim away the excess dough and pinch the edges to create a fluted design.
5. Stir the melted butter into the mincemeat filling and spoon this into the pie shell, spreading to level it. Roll out the second disk of dough and use a cookie cutter to cut out shapes of your choosing. Arrange the cut-outs over the mincemeat filling, placing them closely together over the entire surface of the pie. Brush the pastry with eggwash and sprinkle lightly with sugar.
6. Place the pie onto a parchment-lined baking tray and bake for 10 minutes at 400 F (205 C), then reduce the oven temperature to 375 F (190 C) and then bake for about another 40 minutes, until the crust is golden brown. Cool the pie for at least 2 hours before slicing, or cool to room temperature and then chill before serving.
