How to Make SHRIMP & MAHI MAHI Sinigang | a touch of Tom Yum Soup | Healthy
Shrimp and Mahi Mahi Sinigang with a Touch of Tom Yum Soup Recipe by Abbey’s Joy of Cooking
Ingredients:
1 lb. Mahi-Mahi or any fish of your choice, seasoned with salt, sliced
1 lb. shrimp, extra jumbo, seasoned with salt, cleaned and deveined
8 cups rice water, use rice water from the 3rd wash as shown on the video (vegetable broth or chicken broth can be used also)
1 medium onion, sliced
2 tablespoons ginger, sliced
8 oz mushrooms
1 stalk lemon grass, sliced and pounded lightly
A bunch of green beans, sliced (optional)
4 pieces carrots, sliced
1 green bell pepper, sliced
2 medium green zucchini squash, sliced
2 medium yellow zucchini squash, sliced
1 lb. spinach
1 sweet chili pepper (optional)
1 can diced tomatoes (fresh tomatoes are also good for this recipe)
2 tablespoons Tamarind Soup Mix (You may substitute lemon juice also)
1 1/2 tablespoons honey
¼ teaspoon cayenne pepper
2 teaspoons salt or to taste
3 teaspoons chicken base
1 teaspoon Oyster sauce (optional)
For Garnish:
A bunch of cilantro leaves
Lime juice
Green onions, sliced
Directions:
In a large pot on medium heat, pour in the rice water. Add lemon grass, ginger, and onion. With the lid on, bring it to a boil, and let it simmer for about 20 minutes. Add the carrots and green beans. Simmer for about 10 minutes. Add the bell pepper and diced tomatoes. Put the lid on, then bring it to a boil. Using a small amount of broth from the soup, add the tamarind soup mix and stir well to combine. Add the mix to the soup. Add the chicken base, honey, and cayenne pepper. Add the sweet chili pepper, zucchini squash, and mushrooms. Put the lid on and bring it to a boil. Add the mahi-mahi and shrimp. Mix well. Taste the broth, and adjust the salt to your liking. Add the spinach. Put the lid back on and turn off the heat.
Serve with cilantro leaves, lime juice, and sliced green onions.

材料 / Ingredients
香茅(檸檬草) / Lemon grass x 3 pcs
青檸葉 / kaffir lime leaves x 25 pcs
南薑 / galangal x 2 pcs
紅蔥頭 / shallot x 4 pcs
青檸汁 / lime juice x 1tbsp

Spicy Coconut Mandarin Soup with Mushrooms
Today's recipe is an Asian-inspired soup from Williams-Sonoma. I didn't have the right mushrooms, and I made the vegetarian fish sauce, but this is a really delicious soup. I want to make it again with enoki mushrooms when I'm able to easily go to an Asian market again. This isn't an authentic ethnic dish, but a delicious one nevertheless.
Here's what you need:
For the Fish Sauce:
1 T. sugar
2 T. soy sauce
2 T. water
1 T. roasted peanuts
1 t. kelp powder or kombu powder (or some kind of seaweed that can be powdered) I used this Kombu Dashi from Amazon.
1 fresh hot chili pepper, seeds removed (opt.) - I skipped this part.
For the Soup:
1 c. long-grain white or brown rice
1 c. chick-un broth
1 can coconut milk (not the sweet stuff)
1 T. Fish Sauce
1 t. Thai curry paste (I used yellow, but you could use red or green.) I bought mine from an Asian market, but I found this at Amazon. It's probably just fine.
1 serrano chile
2 c. enoki mushrooms or quartered button mushrooms
1/2 c. oyster mushrooms, chopped
1/2 c. fresh basil, chopped
1/2 t. kosher salt (I skipped this.)
1/2 t. black pepper
