How To make Ricotta Stuffed Zucchini Flowers
1 lb Ricotta cheese
1 Onion; minced
1/2 c Toasted almonds or pine nuts
-(finely chopped) 1/2 c Grated Italian Asiago cheese
-OR- Parmesan cheese 1/2 ts Ground pepper
1 ts Seasoning salt
2 tb Minced fresh basil; -=OR=-
1 ts -Dried basil
2 tb Minced parsley
1 ts Butter; melted
20 md Zucchini flowers, or more
-OR- any squash flowers, -Freshly picked and -rinsed in cold water Nasturtiums for garnish Mix together all ingredients except butter and flowers. With filling at room temperature, use a pastry tube to carefully stuff flowers; do not overfill. Drizzle melted butter over flowers and cook in microwave on medium power for 3 minutes, or at 350 F in regular oven for about 15 minutes. Be careful not to let filling ooze out of flowers. Garnish with nasturtiums stuffed with extra filling.

HOW TO MAKE: Zucchini Flowers Stuffed with Mozzarella and Anchovies | David Rocco's Recipes
This recipe is a beauty!!! Here's what you will need:
Ingredients:
12 zucchini flowers, cleaned
1 large Fior di latte or Mozzarella, cut into thin strips
12 anchovy filets
1 egg yolk
1 cup of AP flour
1 cup sparkling water, cold
3 ice cubes
Vegetable oil for deep frying
Salt to taste
Stuff the zucchini flowers with fior di latte or mozzarella and anchovy filets.
Create a batter by mixing egg yolk, flour, sparking water in a bowl. Mix until it’s a smooth pancake like batter, then add ice cubes and set aside.
Heat the vegetable oil, test it with a drop of batter to see if it sizzles. If it sizzles proceed to dip the flowers in the batter, drip excess batter and gently place battered flowers in the hot oil. Make sure you don’t over crowed the pan, fry in batches. When crisped up and golden, remove and put on a plate with an absorbent paper towel to drain excess oil and add a little salt. Serve immediately.

Baked Zucchini Flowers stuffed with a Creamy Ricotta Filling are classy, stylish, and sophisticated. If you've never tried zucchini blossoms before, you have to try this recipe! It's simple but elegant, and is a classic Italian dish. Great as an appetizer or side, it's family-friendly and a total crowd-pleaser!

Fried zucchini flowers Italian recipe | How to make Stuffed Zucchini Flowers
Ingredients:-
For the dough-
2 cups all-purpose flour (250 grams)
1/2 tsp dry active yeast
1/2 tsp salt
1 1/2 cups to 1 3/4 cups of water at room temperature
For stuffing-
8 oz of Ricotta cheese(225 grams)
8 oz of mozzarella cheese (225 grams)
Zucchini flowers fresh picked in the morning.
2 cups or more of oil for frying such as vegetable/canola/sunflower 480 ml
Directions:-
1. Pick your zucchini flowers in the morning when they’re open.
2. Remove the pistil and small spikes on the outside. Rinse and let dry on a paper towel.
3. Prepare the dough by mixing all the dry ingredients in a large bowl.
4. Slowly add the water and, with one hand, keep mixing until sticky and smooth. Keep working for at least 5 minutes.
5. Now cover with plastic wrap and let it rise until doubled in size.
6. Depending on the temperature in your house, this could take 2 or more hours.
7. Once the dough is ready, it’s time for the next step.
8. In a deep frying pan filled with the oil bring to 350 degrees Fahrenheit.
9. Mix your ricotta with the mozzarella cut in cubes. With a small teaspoon, gently fill the zucchini flower with the mixture.
10. Now in a swirling motion, dip in the batter and fry on medium to high heat turning once until golden.
11. Drain on a plate lined with a paper towel. Cool slightly before eating; otherwise, the ricotta will run out of the flower.
Extra options:-
If you have batter left, you can shred the remaining flowers and some Parmigiano Reggiano and mix together. You can now fry in little zeppole.
