How To make Green Tomato & Onion Pickles
1 1/2 c Granulated sugar
3 c Cider vinegar
1/2 c Salt
6 tb Mustard seed
2 ts Whole allspice
1 ts Whole cloves
4 qt Green tomatoes, cut into 1/2
-- inch slices 1 1/2 qt Medium onions, sliced
Combine the first 4 ingredients in a kettle. Tie the Allspice and Cloves in a cheesecloth bag and add to the kettle. Bring to a boil. Add the tomatoes and onions. Boil, uncovered, for 5 minutes or until just tender, lifting the slices from the bottom to the surface with a fork during cooking. Drain, reserving the liquid, remove the bag and pack the pickles into clean, hot preserve jars. Reheat the liquid to boiling and pour at once into the jars over the pickles. Seal, adjusting the lids as the manufacturer directs. Process in a hot water bath, the timing adjusted to your conditions. (Contact your extension agent for information on canning.) Source Unknown

brine: equal parts water, sugar, and rice wine vinegar. mustard seed, and ras el hanout( a Moroccan spice blend)

Betty's Pickled Green Tomato Relish
Betty demonstrates how to make a gorgeous and tasty Pickled Green Tomato Relish. This is a refrigerated relish that can be served alongside a sandwich or a main entree. This recipe is adapted from Spicy Pickled Green Tomato Relish Recipe on mccormick.com.
Pickled Green Tomato Relish
2 cups chopped green tomatoes
1 cup chopped green bell pepper
¾ cup chopped onion
½ cup white vinegar
2 tablespoons sugar
1 teaspoon salt
1 teaspoon celery seed
1 teaspoon mustard seed
1 teaspoon red pepper flakes
2 bay leaves
Place green tomatoes, bell pepper, and onion in large bowl. Stir and set aside. Place vinegar, sugar, salt, celery seed, mustard seed, red pepper flakes, and bay leaves in small saucepan and bring to a boil over medium heat. Reduce heat to low and continue to simmer, stirring occasionally, for 5 minutes. Pour over reserved vegetables in bowl. Stir to distribute sauce. Cover with plastic wrap and refrigerate at least one hour, or until ready to serve. Remove bay leaves when ready to serve. I hope you love this verdant, spicy relish! --Betty ♥♥♥
