How To make Fish Soup
4 tb Olive oil
1 md Chopped onion
3 cl Garlic, minced
4 cn Minced clams
4 c Peeled and chopped tomatos
1 c Finely chopped carrots
2 c Finely chopped celery
1 ts Salt
1/2 ts Dry mustard
1/2 ts Oregano
1/2 ts Paprika
4 Bay leaves
1 1/2 lb Shrimp
1 lb Scallops
2 cn Beef broth
2 cn Chicken broth
4 cn Water
1 lb Cut bite size haddock
1 lb Cut bite size cod
Saute onion, garlic, olive oil in heavy pan until golden. Add clams, tomatos, carrots, celery, broth, water and spices. Simmer for about 1 hour. Add fish and scallops. Let come to a boil. Add shrimp. Let it come to a boil till fish flakes with a fork.

I’m not really sure what to call this but it’s definitely in the realm of Hmong/Lao/Thai food because of the ingredients used. I wasn’t able to find galangal and lime leaves, but if you are then definitely use it to flavor the broth.

FISH SOUP CHINESE STYLE | CH SECRET RECIPES
This fish soup Chinese style will nourish your body down through to your soul! One of the easiest to prepare, it takes only just 20 minutes you already done. This silky smooth soup is beautifully fragrant and can be made with ANY fish you love!
INGREDIENTS
50 g Spring Onions
2 Large size Fish, any fish for soup
2.5 lit. of Water
Salt
White Pepper
PROCEDURE
Wash and chop the spring onions into small pieces.
Clean the fish and slice both sides.
Heal oil in a frying pan, fry the fish until both sides are golden brown. After frying, transfer into a wok with boiling water. Season with salt and white pepper.
Cover, over high heat for 15 min. Add the chopped spring onions, simmer for 2 min. and serve hot.

I’m not really sure what to call this but it’s definitely in the realm of Hmong/Lao/Thai food because of the ingredients used. The base of this recipe uses salmon heads and bones which are usually very cheap at the grocery store. It really adds so much flavor to the broth and you can pick off the meat when it’s done cooking. I also know galangal and lime leaves are hard to find, but it really makes a difference in elevating the flavor.

Creamy Milky Fish Soup (奶白鱼汤)

Today, we are making Milky White Fish Soup, or what we call Naibai Yutang (奶白鱼汤). It got its name from the white look, the milky taste, and the creamy consistency. But there are no dairy products added to this soup. The recipe is extremely simple, and there is only one secret you need to know in order to turn the fish bones and water into this fabulous broth.

INGREDIENTS
6-8 scallion
2-3 inches of Ginger
3 tbsp of Chinese cooking wine (Amazon Link -
4 tbsp of Cornstarch
12 oz of fish bones 3 oz of bones needs 1 cup of water
4 cups of water
3/4 tsp of salt or to taste
2 tbsp of oil to fry the fish bones
INSTRUCTIONS
Chop the fish bones into 1.5-inch-wide pieces. Any type of white fish that has a mild taste will work beautifully. This recipe uses minimal seasonings to highlight the natural flavors of the fish. So, the freshness matters, do not use frozen sources. Set the fish bones aside.
Cut 6-8 scallions into 1.5-inch-long pieces. Slice 2-3 inches of ginger thinly.
Rub the fish with 2/3 of the scallion, 2/3 of the ginger, 3 tbsp of Chinese cooking wine, and 4 tbsp of cornstarch for 5 minutes. Be sure to wear gloves, otherwise, you might get hurt by the sharp bones.
Rinse the starch off with running water. Discard the aromatics. Drain completely. Dry the bones with paper towels. Set it aside.
Turn the heat to high and heat the wok until smoking hot. Add a drizzle of cooking oil and toss in the fish bones. brown the fish until golden brown.
Add the reserved scallions and ginger. Pour in 4 cups of boiling hot water and keep the heat on high the whole time. When the liquid is whitened, put on the lid and keep the heat at medium for 6-8 more minutes.
Use a sieve to get rid of the solid bits. season the fish broth with salt and pepper. Garnish with diced scallions. Enjoy!
