Bableves - Hungarian Bean Soup
This recipe was taught to me by my mother in-law who lives in Hungary, so you know, this is the REAL deal. Bableves or bean soup is a comfort food that can be made easily and with ingredients that are easy to find. For this recipe though, try to find the reddest paprika you can find. I would suggest Penzeys if you cannot find a source for the real thing.
RECIPE:
Bableves:
1 ham hock, smoked
1/2 package or 3/4 package of dried pinto beans (presort and rinse off before using) You can soak them overnight if you want them to cook much faster.
2 bay leaves
pepper (My mother in-law uses pepper corns but I just use generous amounts of ground pepper)
salt (add to taste)
4 carrots or a large handful of baby carrots, cut lengthwise
1 turnip or white carrot (feher repa) Not necessary, but good if you have it.
Thickener:
2 tbsp oil
2-3 tbsp flour
1-2 tbsp paprika (the redder the better)
Csipetke (noodles)
1 egg
1/2- 1 cup flour
1/2 tsp salt
How to make hungarian green beans soup (recipe) - paszuly leves recept - supa de fasole
In my family we used to have a soup every week. This one is one of my favorites and as such was one of the first ones that I ever prepared. It's really easy to put together, doesn't need fancy ingredients...
If you want to spice it up, feel free! I used sweet paprika powder, but you could add hot also. You could fry some mustard seed in the oil before saute-ing the onions. We also have a smoked ham concentrate in Romania as well as in Hungary, if you can get your hands on it, or want to put real smokes ham in it... that would give it an amazing flavor...

4 Hungarian Warming Soups Recipes
1. Hungarian green bean soup recipe
Ingredients:
- 500 g cut green bean
- 150 g bacon
- 150 g smoked sausages
- 1 onion
- 3 medium potatoes
- 3 cloves of garlic
- 200 ml sour cream
- 1 tbsp all-purpose flour
- salt&pepper, ground caraway, parsley, dill
2. Hungarian Fisherman's Fish soup Szeged style
Hungarian Fisherman's Fish soup - In Hungary, the collective term “fish soup of the Tisza region” can refer to the Szeged, the Szolnok, or the so-called Tisza vinous varieties. The recipes of the Tisza region are more complicated than the recipes of Baja: while in the latter one fish are not sieved, but simply stewed with onion and the soup is made strictly from carp, in the Tisza region first a broth is made from onion, paprika and fish offal, then it is sieved, and the fish steaks cut earlier are prepared in it.
Ingredients:
- 3,3 lbs carp (head, tail, skeleton)
- a total of 3,3 lbs catfish head and skeleton, pike meat
- 2,2 lbs catfish and carp fillet
- 1 lb old onion
- 3-4 tbsp Hungarian sweet paprika powder (good quality)
- 2 large tomatoes
- 2 Hungarian yellow wax peppers
- salt
3. Hungarian mushroom soup recipe
It's a very simple, creamy and delicious dish. Try it from other mushrooms too, heavenly!
Ingredients:
- 2 carrots
- 1 turnip
- 1/2 lb chestnut mushroom
- 1 large onion
- 1 tbsp marjoram
- 1 tsp ground black pepper
- 1 tbsp paprika powder
- salt
- 2 tbsp butter
- 8 cup broth or water
Buttered noodles:
- 4 tbsp flour
-1 egg
- 1/4 tsp salt
- 1 tbsp melted butter
Thickening:
- 1 cup sour cream
- 1 tbsp flour
4. Hungarian Chicken Dumpling Soup
Ingredients:
-1 whole chicken breast with bones
-1 whole chicken backbone
-3 carrots
-1 parsley root
-1/2 celery root
-1/2 yellow wax pepper
-1 tomato
-1 head of onion
-2 cloves of garlic
-1 head of kohlrabi
-20 black pepper seeds
-salt
-soup pasta
For dumplings:
-1 egg
-2 tbsp breadcrumbs
-1/2 tsp nutmeg
-salt&pepper

Hungarian bean soup recipe
Main pot:
500g white beans
700-1000g smoked pork
3 carrots
2 celery stalks
2 capsicums
1 onion
6 garlic coves
3 teaspoons salt
2 bay leaves
Secret sauce:
2 cloves garlic (finely chopped)
4 teaspoons flour
3 teaspoons paprika
6 step Hungarian green bean “soup”/főzelék
Today we will show you how to cook a special type of soup, or as we call it, főzelék.
Did I say special? It's so easy to cook, you'll be blown away!
All you need are:
1. green beans (frozen, this time, but you can use the same recipe for fresh),
2. sour cream (3 tablespoons, this is why it's not a vegan recipe),
3. flour (2 tablespoons),
4. salt, or dried vegetable mix, that we call vegeta - available in Polish shops, probably under the brand name Vegeta, or Kucharek (but you don't need to overcomplicate it: use salt, that's easy!)
5. pepper
water
and optionally paprika
1. Put the beans on high heat into a large dish and pour some water in it. (You can use a kettle to make things faster.)
2. Put some salt and pepper, as you like them. Mix them into the beans.
3. Once the water is boiling under the green beans, put them on lower heat. Stir gently.
4. Preparing the thickener: put 3 tablespoons of sour cream in a small bowl. Stir two tablespoons of flour into it and mix them.
5. After 5-8 minutes of cooking, once the beans are easy to break, put the thickener in the beans, and mix them.
6. Stir the mix constantly for five minutes on lower heat. Optionally, you can put some paprika in it at this point.
Then it'll be ready! Enjoy!
You can serve it on its own, with egg, or if you do like some meat, you can put some meat in it! Recommended to have some bread on the side - that's how we traditionally eat this in Hungary!

This GREEN BEAN SOUP is not that popular, but that's a shame. It's sweet and sour in taste, full of green beans, potatoes, bacon and boiled eggs... the perfect combination to warm your body and soul.
