How To make Cauliflower Soup (Norway)
5 1/2 c Cauliflower florets
2 c Water
1 ts Salt
2 tb Margarine
1/2 c Diced onion
2 ts All-purpose flour
1 Pkt instant chicken broth
-and seasoning mix 1 c Skim milk
1 ds White pepper
Ground nutmeg (Optional) In a 4-quart saucepan, combine cauliflower, water and salt; bring to a boil. Reduce heat and let simmer until cauliflower is tender; let cool slightly. Transfer 2 cups cauliflower (including cooking liquid) to blender container and process until smooth. Repeat procedure, 2 cups at a time, until all cauliflower and cooking liquid have been processed. Set aside. In same saucepan heat margarine over medium-high heat until bubbly and hot; add onion and saute until translucent. Sprinkle with flour and broth mix and stir quickly to combine; cook, stirring, for 1 minute. Gradually add milk and cook, stirring constantly, until flour mixture is completely dissolved and liquid thickens; stir in pureed cauliflower. Reduce heat and let simmer, stirring accasionally, until heated through; stir in pepper. Ladle into 4 soup bowls and, if desired, sprinkle each portion with dash nutmeg. Makes 4 servings. 1 large head of cauliflower (1.5kg)
1 large onion
1 potato
2-3 celery stalks
2 garlic cloves
1 tsp thyme
1 tsp salt
1/2 tsp black pepper
1/4 tsp freshly ground nutmeg
2-3 tablespoons olive oil
7-8 cups (2.6-2.9L) vegetable/chicken stock (recipe:
Directions:
1. Roughly chop onion, potato, celery stalk and garlic cloves. Cut cauliflower into florets.
2. In a large saucepan heat olive oil. Sauté onion, celery stalks and garlic cloves for 5 minutes over medium heat. Add potatoes and cauliflower florets.
3. Pour in the stock. Bring to a boil, reduce the heat to low and simmer until all the vegetables are tender. About 30-35 minutes. Add salt and pepper.
4. Puree the soup until smooth.
5. Add freshly ground nutmeg, check for seasoning, add salt if needed.
6. Simmer for 5-10min more.

The smooth silkiness of this cauliflower soup is a culinary match made in heaven when paired with the tangy saltiness of crumbled Roquefort blue cheese. You can serve the soup with any warm crusty bread, but a good-quality loaf of walnut sourdough makes for an extra special accompaniment.

How To Make Delicious Homemade Danish Creamed Cauliflower Soup
What could be better than ready-to-eat homemade soup when you arrive home!
This creamed cauliflower soup is versatile. You can leave the cauliflower in chunks or you can puree the soup too.
♥ Ingredients ♥
1 large cauliflower
2 cups chicken broth
1 cup heavy cream
1 small chopped onion
2 tbsp. butter (or oil)
1 egg mixed with a little milk salt pepper
Toppings: parsley, crisp bacon,cooked shrimp or cheese
Instruction: Melt butter and saute chopped onion, add cauliflower pieces and pour in chicken stock, cook for approx. 5 min. Using a blender mix it all up, but first remove some of the cauliflower pieces. Add cream, salt, pepper. Mix 1 egg with a little milk and add it as well. Finally add cauliflower pieces and toppings.
