How To make Cauliflower Soup (Norway)
5 1/2 c Cauliflower florets
2 c Water
1 ts Salt
2 tb Margarine
1/2 c Diced onion
2 ts All-purpose flour
1 Pkt instant chicken broth
-and seasoning mix 1 c Skim milk
1 ds White pepper
Ground nutmeg (Optional) In a 4-quart saucepan, combine cauliflower, water and salt; bring to a boil. Reduce heat and let simmer until cauliflower is tender; let cool slightly. Transfer 2 cups cauliflower (including cooking liquid) to blender container and process until smooth. Repeat procedure, 2 cups at a time, until all cauliflower and cooking liquid have been processed. Set aside. In same saucepan heat margarine over medium-high heat until bubbly and hot; add onion and saute until translucent. Sprinkle with flour and broth mix and stir quickly to combine; cook, stirring, for 1 minute. Gradually add milk and cook, stirring constantly, until flour mixture is completely dissolved and liquid thickens; stir in pureed cauliflower. Reduce heat and let simmer, stirring accasionally, until heated through; stir in pepper. Ladle into 4 soup bowls and, if desired, sprinkle each portion with dash nutmeg. Makes 4 servings. Vegan creamy cauliflower soup:
Ingredients:
I head of cauliflower
2 onions
smoked paprika
salt
2 cloves of garlic
2cups water
1 cup coconut milk
the coconut cream from one can of coconut milk
Chop the onions and garlic and set those aside. Get out your cauliflower everyone! Remove the leaves and stem and break up your cauliflower pieces and place them into a bowl. Don't forget to wash the cauliflower before cooking! Were going to be using coconut milk for this recipe. Open your can of coconut milk and scoop out all the cream and set that aside. then you are going to reserve 1 cup of coconut milk from the can and set that aside as well.
First, place the coconut oil, chopped onion and garlic in a pan on medium-high heat stirring occasionally. Let that cook for about 5 minutes. Then add the 2 cups of water, coconut meat and 1 cup of coconut milk, and then add in the chopped cauliflower. Cover the pot with the lid and let that boil for about 10 minutes until the cauliflower is tender. Add spices and blend until smooth and creamy. At this point you can add more water if you find your soup too thick!
Top with more smoke paprika salt or anything you desire.

Ingredients:
• 1 Large Head Cauliflower (about 2 pounds), cut into bite-size florets
• 3 tbsp Olive Oil, divided
• 1 Medium Onion, chopped
• 3 Cloves Garlic, minced
• 4 cups (32 ounces) Vegetable Broth
• 1 cup Milk
• 2 tbsp Unsalted Butter
• Salt
• Paprika
• Parsley
Step 1
Start by cutting the cauliflower and place the pieces on a baking sheet lined with parchment paper. Toss them with 2 tablespoons of olive oil, season with salt and sprinkle some paprika on top for an extra flavor. Bake it at 180°C until the cauliflower is tender and caramelized on the edges, 25 to 35 minutes.
Step 2
Chop the onion and mince the cloves garlic. In a medium saucepan, warm the remaining 1 tablespoon of olive oil and add the onion and the garlic. Cook until they are softened and turning translucent, 5 to 7 minutes.
Step 3
Add the vegetable broth. Remove the cauliflower from the oven and add it on our sauce pan. Reserve 2 or 3 of the prettiest roasted cauliflower florets for garnish. Bring the mixture to simmer for about 20 minutes to give the flavors time to meld.
Step 4
Once done, transfer the mixture on a larger pan, and blend until creamy. Add the milk and continue blending until well incorporated. Place the pan back on the heat, stir a little bit and add the butter. Stir continuously for 2 minutes and then blend again in case you want the soup to become creamier.
Step 5
Once ready, transfer the cauliflower soup on a bowl and top it with 2 or 3 cauliflower florets. Sprinkle some paprika on top for an extra flavor and add some fresh parsley leaves.
