How To make Bombay Rice & Lentils

onion, medium-size, chopped

rice, brown, uncooked

tablespoon
tomato paste
2 1/2

water
1/4
teaspoon
cinnamon
1/4
cup
lentils, uncooked
1/2
teaspoon
salt, seasoned
1/2
cup
raisins
1/2
cup
pinenuts
Directions:
Saute onion in oil in large skillet until soft. Add rice; cook, stirring, several minutes. Combine tomato paste, water, cinnamon and lentils in a bowl; add to rice.
Bring mixture to a boil; cover tightly, reduce heat and simmer 30 minutes. Stir in seasoned salt, raisins and pinenuts. Grease an 8-inch square baking dish; pour in rice mixture. Cover and bake in preheated 350 degree oven for 20 to 30 minutes.

190g | 1cup green lentils
1 onion
1 carrot
1 garlic clove
170g | 1 cup cooked rice
1tsp ground coriander
1tsp Italian herbs
salt
???? Sauce ingredients:
1tbsp tomato puree
1tsp sugar
1tsp flour
salt & black pepper to taste
250ml | 1cup water
????????Cooking tips:
❗Feel free to add your favourite herbs and spices to the recipe to get your favourite flavour.
???? Method:
Soak 190g | 1 cup green lentils in water for 3 hours.
Add drained lentils to a bowl.
Mash with hand blender.
Chop 1 onion.
Transfer chopped onion into a lightly oiled frying pan.
Peel and grate 1 carrot.
Add to the onion and cook about 5 minutes.
Chop 1 garlic glove.
Combine well.
Add 170g | 1 cup cooked rice to the mashed lentils.
Add cooked carrot and garlic mixture.
Season with 1tsp ground coriander, 1tsp Italian herbs, salt to taste.
Mix until combined and transfer to the fridge for 10 minutes.
Shape into small balls.
Heat a little olive oil in a non stick skillet.
Fry the lentil meatballs for about 5 minutes on each side, or until golden and crispy.
In a mixing jar combine 1tbsp tomato puree, 1tsp sugar (optional), 1tsp flour, a pinch salt and black pepper to taste, 250ml | 1 cup water.
Pour the sauce and cook lentil meatballs under the lid for about 20 minutes.

4 tablespoons oil (rice bran, avocado or grape seed oil)
1 large onion
½ cup chile spiced mango (or ½ cup dried mango and 1 teaspoon chili powder)
1 teaspoon ginger
1 teaspoon turmeric
1 teaspoon cumin
1 cup sprouted bean trio (truroots)
1 cup sprouted rice and quinoa blend (truroots)
2 no salt added vegetable bouillon cubes
4 cups boiling water
2 teaspoons Himalayan pink salt
1 star anise
1 teaspoon cinnamon
½ cup raisins

Ingredients:
1 medium onion chopped
½ cup dry lentils (green or brown)
¾ cup whole grain (bulgur wheat, farro, or rice)
1 ¾ cup vegetable stock
½ cup hummus
1 tsp cumin
1 tsp coriander
Garnish with dried parsley
Directions:
Sauté onions in instant pot with 1-2 tbsp of vegetable stock until translucent.
Add in dry lentils, whole grain, remainder of vegetable stock, hummus, cumin, and coriander. Stir together well.
Set instant pot to sealing – High pressure for 6 minutes.
Let the instant pot release naturally (until the pin drops).
Use a fork/spoon to fluff the dish.
Garnish with dried parsley and serve with your favorite veggies!
