How To make Aloo Ko Achar (Potato Salad)
1 lb Potatoes, small size if
-possible 4 Jalapeno peppers, optional,
-Seeded & sliced into long -strips 1 Lime, juice of
Salt to taste 1/4 c Sesame seeds, roasted,
- ground, optional 1 ts Tumeric powder
1 ts Cumin seeds
2 To 3 Chilies, whole, dried
3 ts Corn oil, or mustard oil
-mustard gives best flavor 1/2 c Water
1/2 c Coriander, fresh, chopped
Boil potatoes in jackets. When done, peel & cut into small pieces. In a suitable bowl, combine potatoes, tumeric, salt, ground sesame seeds, lime juice, half of the green coriander and water and mix thoroughly. In a small pan heat mustard oil until hot; add cumin seeds and red chilies. Fry them until brown and then add jalepeno pepper. Let it cook a minute or so. Pour it over potatoes in the bowl and mix them thoroughly; garnish with remaining green coriander leaves. 4. 1/4 Tsp Fenugreek Seeds. (Methi)

Nepali Aloo ko achar is one of the most popular side dishes in Nepal. Alu ko achar goes well with roti, pulao or any other dishes therefor it is popular during marriages and party. Aalu ko Achar is one of my favorite dishes. This potato salad is a bit spicy, sour and tangy in taste. It is very easy to make.

Aloo ko achar is a popular Instant pickle from Nepali cuisine. Potatoes and peas tossed in mustard oil and fenugreek tadka is a Nepali Recipe of Potato curry. An easy and simple Nepalese recipe. This instant potato pickle or achar served as a side dish in 'bhoj' that is a ceremonial feast

4 medium-sized potatoes
1 large cucumber
1 large carrot
1 cup green peas
1 onion
2 green chilli
4 dry red chilli
a handful of coriander leaves
1 teaspoon cumin seeds
1 teaspoon fenugreek seeds
3 tablespoon sesame seeds
1 tablespoon mustard oil
1/2 teaspoon turmeric powder
2 teaspoon black and white salt
juice from 1 lime

Instructions
1. Coarsely grind coriander seeds, cumin seeds and ginger in a mortar and pestle. Keep it aside.
2. Cut the boiled potatoes into cubes and put them in a shallow dish, add in the green peas.
3. Sprinkle the sesame seed powder and yellow mustard powder in the potato.
4. Add chopped green chillies, salt, red chilli powder, and the coarsely ground spices (coriander, cumin, and ginger)from the mortar to the potatoes.
5. Take a pan and heat about 4 tablespoons of mustard oil till it starts to smoke a little. Cooking or heating the mustard oil will remove the pungent raw taste it has.
6. Switch off the heat and add ½ teaspoon fenugreek seeds and ½ teaspoon turmeric powder to the oil.
7. Pour this hot oil tempering over the bowl of potatoes and spices and mix thoroughly tossing the seasoning (tadka) with the potatoes.
8. Squeeze a lemon and toss it again.
9. Serve with roti, pulao or any other dishes
