Easy $1 NO BAKE Chocolate Cake (AKA Ice Box Cake):
- Chocolate cookies of your choice ( I used Gentilini cookies)
- 500g Cold Heavy Cream (18 ounces)
- 170g Dark Chocolate (6 ounces)
- Milk to dip the cookies in
Take the cake out of the fridge 30 minutes before serving so the mousse and cookies soften up again.

In this episode of In the Kitchen with Matt I will show you how to make no bake chocolate oatmeal cookies. This recipe for no-bake chocolate oatmeal cookies is really easy to make using everyday ingredients. They don't take super long at all to make either. These chocolate cookies are incredible and they are gluten-free! Time to mix things up a bit and make some no bake cookies. If I can make them, you can make them. Let's get started! :)

Ingredients:
1/2 cup of unsalted butter (113g)
1/2 cup of milk (whole, 2%, 1%, etc.) (118mL)
1 1/2 cups of white granulated sugar (300g)
1/4 cup of unsweetened cocoa powder (30g)
1/4 tsp. of salt (1g)
1/2 cup of packed brown sugar (light or dark) (100g)
2 tsp. of vanilla extract (10mL)
1/2 cup of peanut butter (125g)
3 cups oats (quick or old fashioned) (240g)

No-bake peanut butter oat bars use just four ingredients and come together in minutes. The combination of rolled oats, natural peanut butter, maple syrup and dried cranberries makes a wholesome and delicious sweet treat or breakfast on-the-go.

NO BAKE PEANUT BUTTER OAT BARS
1.25 cups rolled oats, gluten-free
1 cup all natural peanut butter, unsalted
1/3 cup maple syrup
1/2 cup dried cranberries, chopped
INSTRUCTIONS
Line an 8x8 baking dish with parchment paper and set aside.*
In a large bowl; combine oatmeal, peanut butter, maple syrup and dried cranberries.
Mix everything together until you have a thick batter. Transfer batter into prepared baking dish.
Flatten using a spatula or your hands until the oat mixture is evenly distributed and even on top.
Chill for a couple of hours or until the oat bars have firmed up. Cut into 16 squares and enjoy!
NOTES
*If you do not have parchment paper, you can grease the pan with coconut oil or cooking spray.

Ingredients
* 1 cup quick cooking oats
* 1/4 cup shredded unsweetened coconut
* 1/2 cup creamy almond butter
* 1/4 cup maple syrup
* 1/4 cup coconut oil
* 2 tablespoons cocoa powder
* 1/4 teaspoon fine salt
* 1/2 teaspoon vanilla
* 1/3 cup chopped walnuts
Instructions
* Line a cookie sheet with parchment paper, set aside.
* Combine almond butter, maple syrup salt, vanilla and coconut oil in a saucepan and heat over medium low heat, stirring constantly, until melted and well combined.
* Stir in cocoa powder, quick-cooking oats and mix well.
* Add coconut and stir until completely combined.
* Scoop 2 tbsp portions of mixture onto your prepared baking sheet. Shape cookies.
* Let cool in the refrigerator or freezer until hardened ( 2 hours - overnight)
* Serve cold or frozen!
* Store in an airtight container in the refrigerator!
Notes
These cookies are best served cold. Coconut oil becomes soft at warm temperatures!
Ingredient substitutions:
* Almond butter. Any nut or seed butter should work well in this recipe!
* Coconut oil. Butter or ghee are great substitutes for coconut oil!
* Maple syrup. Use any liquid sweetener.
* Shredded coconut. If you don’t care for coconut, simply replace it with an extra 1/4 cup quick-cooking oats. However, I think the coconut is one of the ingredients that makes this recipe extra special and delicious!
❗️Measurements Note: All recipes have been developed using weight measurements. Although US volume measurements have been included for your convenience, it is highly encouraged that you weigh your ingredients using a kitchen scale to get the best possible results. Due to the sensitive nature of baking, kitchen scales are proven to yield more accurate and consistent results than measuring cups. Enjoy!
