Cheese and Beer Soup | Emeril Lagasse
Emeril’s super rich and creamy cheese and beer soup gets extra flavor from kielbasa and cheesy croutons. Yes, it tastes as good as it sounds!
CHEESE AND BEER SOUP
SERVES 6 TO 8
3 tablespoons olive oil
8 3-inch pieces kielbasa sausage
1 1/2 cups chopped yellow onions
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
¼ teaspoon Emeril’s Essence Creole Seasoning
2 tablespoons butter
6 tablespoons flour
2 bay leaves
4 sprigs fresh thyme
6 cups chicken stock
2 cups dark beer
2 cups cubed Gruyere cheese, plus more finely grated, for garnish
2 tablespoons minced chives or flat-leaf parsley, garnish
Croutons, for garnish (recipe follows)
Heat 2 tablespoons oil in a large pot. Add kielbasa and cook, stirring occasionally, until golden brown on all sides, about 4 minutes per side. The sausage will not be cooked through, it will finish cooking in the soup. Remove kielbasa from pot and set aside.
Heat remaining 2 tablespoons oil over medium-high heat. Add onions, salt, pepper, and Essence. Cook, stirring, occasionally until onions have softened. Add butter and continue cooking, stirring occasionally, until onions are slightly caramelized, 12 to 15 minutes. Sprinkle flour over onions and cook, stirring constantly, for 4 minutes. Add bay leaves and thyme. Gradually whisk in stock and beer and bring to a boil. Reduce heat to medium-low and simmer uncovered, stirring occasionally, for 1 hour.
During the last 15 minutes of cooking, add the kielbasa and cook until sausages are cooked through. Add the cheese 1/3 cup at a time, stirring until nearly all melted and smooth after each addition. Remove from heat and adjust the seasoning. Ladle into soup bowls.
Place one or two sausages in each bowl. Garnish with chives or parsley, croutons, and finely grated cheese.
CROUTONS
MAKES 2 CUPS
2 tablespoons olive oil or butter
2 cups diced day-old French bread (crusts removed), cut into 1/2-inch cubes
¼ cup finely grated Gruyere cheese
Preheat oven to 375 degrees F.
In a medium ovenproof skillet, heat the oil or butter over medium heat. Add the bread cubes and toss to combine. Transfer to the oven and bake, stirring occasionally, until the croutons are golden and crisp, about 10 minutes. Sprinkle with cheese.

RECIPE BELOW
~INGREDIENTS~
-6 slices of raw bacon diced
-1 onion chopped
-1 carrot grated
-2 cloves Garlic minced
-1 T Butter
-1/4 c. Flour
-1 T Worcestershire
-1 t. Ground Mustard
-3 c. Shredded Sharp Cheddar
-1 Bottle of Pale Ale of Pilsner Beer
-2 c. Half and Half
-1 c. Chicken stock
-Salt and Pepper to taste
~DIRECTIONS~
-Cook diced bacon until brown and remove from pan. Leave the bacon fat in the pan.
-In remaining bacon fat add onion and carrot.
-Cook for a few minutes and add garlic, and butter.
-Cook until butter is melted and add flour.
-Cook for a few minutes to get the flour flavor out.
-Add chicken stock and mix.
-Add beer and mix.
-Add cream and mix.
-Add worcestershire and ground mustard. Mix thoroughly and then add cheese one cup at a time stirring gently to incorporate after each cup is added.
-Let cook continuing to stir gently until German Beer Cheese Soup reached thickness.

6 slices thick cut bacon
1 pound boneless skinless chicken breast
4 tablespoons unsalted butter
1/4 cup all-purpose flour
2 teaspoons garlic powder
1/4 – 1 teaspoon cayenne pepper
1 teaspoon smoked paprika
1 1/2 teaspoons kosher salt
1 teaspoon coarse black pepper
1 cup beer, Belgian-style wheat beer (I used Blue Moon)
1 cup reduced sodium chicken stock
2 cups half-and-half
8 ounces mild cheddar cheese, shredded
1 teaspoon Worcestershire sauce
Garnishes
chives, chopped

crisp bacon, diced
Instructions ⬇️
Warm an 8-quart pot over medium-high heat. Using clean scissors; cut bacon into the pot. Cook bacon until it’s crisp, stirring occasionally.
Meanwhile, cut the chicken into bite size pieces.
Using a slotted spoon, remove bacon from pan draining the drippings into the pan as you take out the bacon. Place the bacon inside your upside-down pot lid (or on a plate). Add chicken pieces into bacon grease to cook, sprinkle with 1 /2 teaspoon salt. Stir occasionally until chicken is completely cooked through. Remove chicken from the pot with a slotted spoon and place on the upside-down pot lid with bacon.
Cut butter into 1 tablespoon pieces and add to pan drippings. Stir until melted. Whisk in flour and seasonings. Allow to cook for 1 minute, whisking frequently, to cook out the floury taste. Add beer and whisk to combine and cook for 2 minutes. Add chicken stock and half-and-half. Whisk to combine and reduce heat to medium. Slowly add the cheese, if you add the cheese too quickly it can become grainy, so add a little at a time whisking until it is incorporated. Stir until you have a smooth mixture. Add Worcestershire sauce and return chicken and bacon back to the pot. Stir to combine.
Allow to simmer until ready to serve, stirring occasionally. Garnish with croutons, chives, and bacon.
