How To make Cantaloupe with Chicken Salad
CHICKEN:
2 c Cubed cooke chicken
1 1/2 c To 2 C Fresh blueberries
1 c Sliced celery
1 c Seedless green grapes,
-halved 1/2 c Sliced almonds
3 Cantaloupes, halved seeded
DRESSING:
1/2 c Mayonnaise
1/4 c Sour cream
1 tb Fresh lemon juice
1 1/2 ts Grated lemon peel
1 1/2 ts Sugar
-=OR=- 1 1/2 ts Sugar substitute
1/2 ts Ground ginger
1/4 ts Salt (optional)
In a large bowl, combine chicken, blueberries, celery, grapes and almonds. In a small bowl, mix dressing ingredients. Pour over the chicken mixture and toss gently. Spoon into cantaloupe halves. Serves 6.

Ingredient
For Salad Base:
2 cups lettuce leaf of your choice, torn
2 cups cooked chicken, cubed
For Melon Mixture:
½ cup cucumber, seeded and cubed
1 cup cantaloupe and/or honeydew melon, cubed
3 tbsp green onions, thinly sliced
For Lemon Dressing:
⅓ cup lemon juice
2 tbsp olive oil
2 tbsp water
1 tbsp granulated sugar
salt and ground white pepper to taste
⬇️ How to make Easy Cucumber Chicken Salad ⬇️
0:09 In a large bowl, toss together the melon, cucumber, and green onions. Mix to combine and set aside.
0:34 In a mixing bowl, combine lime juice, oil, water, and sugar. Whisk until evenly incorporated.
0:57 Season to taste with salt and pepper. Adjust accordingly.
1:08 Pour the dressing over the melon mixture. Toss lightly to coat. Set aside and allow to macerate for at least 15 minutes.
1:20 Divide lettuce among 3 dinner plates, roughly ⅔ cup each.
1:25 Portion the melon mixture next to the lettuce, roughly ⅓ cup each.
1:30 Arrange chicken around the edges of plates, roughly ⅔ cup each.
1:43 Drizzle remaining dressing over chicken and serve. Preferably chilled.

3/4 cup (175 mL) fresh blueberries
1 seedless cucumber
Dressing
3 tbsp (45 mL) sugar
2 tbsp (30 mL) apple cider vinegar
2 tbsp (30 mL) canola oil
1 tbsp (15 mL) water
3/4 tsp (4 mL) poppy seeds
1/2 tsp (2 mL) dry mustard
1/8 tsp (0.5 mL) salt
