Moist Zucchini Bread Recipe
Moist, homemade, old fashioned zucchini bread just the way grandma use to make it! I love this recipe for zucchini bread because it easy, quick, and produces gorgeous sweet bread that is so moist and dense. It goes fast in my house!!

Not only is this bread fairly healthy but it makes a great breakfast bread , snack or even add a little vanilla ice cream or cool whip to turn it into a dessert.
What does zucchini bread taste like? It kinda reminds me of banana bread. It's like a cinnamon bread. You can taste the brown sugars and spice. The zucchini flavors blends in well with the sweetness adding a healthy punch!
Zucchini bread and other quick breads freezes really well so I always make several loafs. I love the smell of zucchini bread cooking in the oven. It's a great late summer dessert that can really be enjoyed all year around.
Gift Idea Tip: Wrap slices of fresh, homemade zucchini bread in Seran wrap and place in a decorated tin container and give away as a gift. This bread is great for shipping as well!

Cheesy Zucchini Bread
If the thought of making bread at home has ever intimidated you, this recipe is for you!
A tender bread dough specked with hearty shredded zucchini, cheese, and green onions. Cheesy, moist, and oh so delicious! This is a great one if you're trying to get kids (or adults haha) to eat their veggies, because they won't have a clue that there's zucchini in it.

RECIPE
INGREDIENTS
1 cup, grated Zucchini
1.5 cups, All Purpose Flour
1 tsp, Salt
1/2 tsp, coarsely ground Black Pepper
1 tbsp, Baking Powder
2 large Eggs
1/2 cup, Milk
1/4 cup, Olive Oil
1 cup, grated Sharp Cheddar
1/4 cup, chopped Green Onions
METHOD
Preheat oven to 350 degrees and grease a loaf tin with butter.
Place grated zucchini in a colander, and grab a fistful and squeeze out as much of the juice as possible. Repeat with remaining grated zucchini.
In a bowl whisk together flour, salt, black pepper, and baking soda until well mixed.
In a large bowl whisk together eggs, milk, and olive oil. Stir in grated zucchini, then add in dry ingredients. Mix until no white streaks of flour can be seen.
Then add cheese, and green onions, and fold to evenly distribute.
Transfer batter to loaf tin, smooth top, and bake for 50 minutes. Invert onto a cooling rack and allow to cool for a minimum of 10 minutes. Cut into slices and enjoy! :)
