How To make Zucchini, Peanut and Oatmeal Cookies
1/2 cup unsalted butter -- softened
1/2 cup chunky peanut butter
3/4 cup firmly packed light brown sugar
3/4 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup old-fashioned oats
1 1/2 cups coarsely grated green zucchini
loosely packed
1 cup finely chopped pitted dates
PREHEAT oven to 375F.
In a large bowl and using an electric mixer set on medium speed, beat together the butter, peanut butter and sugars until smooth. Beat in the eggs and vanilla.
In another bowl, stir together the flour, baking soda and salt. Stir the flour mixture into the egg mixture until fully incorporated. Then stir in the oats, zucchini and dates, mixing well. Drop the dough by rounded teaspoons onto ungreased baking sheets, spacing them 2 inches apart.
Bake in the oven for approximately 15 minutes, or until lightly browned. Let cool slightly on the baking sheets, then transfer to racks to cool completely. Makes about 4 dozen cookies. [PER COOKIE 92 Cals, 4g total fat, 14g carbohydrate, 1g fiber, 2g protein, 53mg sodium]
VARIATIONS: Replace dates with a combination of chocolate chips, raisins or dried cherries. Replace zucchini with other squash :
winter or summer varieties.
COMMENTS: A chewy and moist drop cookie. These cookies are not good keepers: plan on eating them within a day of baking.

Ingredients as follows:
⅓ Cup of Whole Wheat Flour
¾ Cup of Old Fashioned Oats
1 Tsp of Ground Chia Seeds
5 Walnut Halves
Salt to taste
¼ Tsp of Baking Powder
½ Tsp of Ground Cinnamon
½ Cup of Shredded Zucchini
2 Tbsp of Melted Coconut Oil
1 Tbsp of Honey
1 Egg
½ Tsp of Vanilla Extract
¼ Cup of Applesauce
Bake 350 Degrees Fahrenheit for 12-14 Minutes
Can be stored in the Refrigerator for about 5 Days

Peanut Butter Zucchini Bread Baked Oatmeal
Ingredients
* 1/2 cup natural drippy peanut butter (creamy or chunky will work)
* 2 tablespoon pure maple syrup or honey
* 1 large egg, slightly beaten
* 2 teaspoon vanilla extract
* 1 1/3 cups of liquid (combine your zucchini juice & milk) ANY milk will work
* 1 1/2 cups old fashioned rolled oats, gluten free if desired
* 1/2 teaspoon baking powder
* 2 tablespoon ground flax seed
* 1 teaspoon ground cinnamon
* 1/4 teaspoon salt
* 1 cup shredded zucchini don’t squeeze out moisture
* 1/4 cup mini chocolate chips, plus 2 tablespoons for sprinkling on top
Instructions
* Preheat oven to 350 degrees. Line your muffin tins with our SiLLibake Baking Cups. No greasing required.
* In a large bowl, add in peanut butter, maple syrup, egg, vanilla and milk zucchini liquid.
* Whisk together until well combined and no large lumps of peanut butter remain.
* Fold in oats, flax, baking powder, cinnamon, and salt.
* Fold in shredded zucchini, and mini chocolate chips.
* Pour into prepared pan and make sure oatmeal is evenly spread out. Sprinkle with a few mini chocolate chips on top.
* Bake for 22-25 minutes until barely golden brown on top and oatmeal is set.
* Allow to cool for a few minutes & enjoy.
* Great for meal prep! They freeze beautifully
