How To make Yam Chili(Vegan)
1 40 oz can yams
1 29 oz can tomato puree
1 cup dried beans -- (*), (1 to 2)
1/4 cup barbecue sauce
1 tablespoon dehydrated onion
1 teaspoon black pepper
1 tablespoon chili powder
1/2 teaspoon cinnamon
Cook up the beans normally (soak, boil, simmer).
Pour yams into pot, including liquid. Smash lightly. Add tomato puree, stir th rough. Add spices, stir through. Add cooked beans, stir through. Simmer for fo r a few minutes to mellow out.
(*) Beans: I keep a 'bean bucket' of mixed beans, usually including pea beans, black-eyed peas, pinto beans, split peas, lentils, navy beans, pinto beans; of ten including great northern beans, roman beans, pink beans, chili beans, barle y, and others. Whenever there's room in the bucket I pour in a bag of somethin g that seems underrepresented.
This would probably be better with fresh yams and tomatoes, but the canned yams were on sale half price the day after Thanksgiving...

SWEET POTATO CHILI:
Vegetable Broth or Oil (4 Tbs)
Diced Red Onion (1 Cup)
Minced Garlic (3 Tbs)
Diced Jalapeños (¼ Cup)
Cooked Black Beans (1 Cup)
Cooked Pinto Beans (1 Cup)
Cooked Kidney Beans (1 Cup)
Cooked White Beans (1 Cup)
Cubed Sweet Potatoes (1-2 Cups)
Can of Corn - Drained (1 Cup)
Diced Tomatoes (1 Cup)
Chili Powder (½ Tbs)
Onion Powder (1 Tbs)
Garlic Powder (1 Tbs)
Cumin (1 Tsp)
Dried Parsley (½ Tbs)
Smoked Paprika (2 Tbs)
Cayenne Pepper (1 Tsp)
Nutritional Yeast (3 Tbs)
Salt and Pepper to Taste (¼-1 Tbs)
Vegetable Broth (1.5 Cups)
Maple Syrup (2 Tbs)
Hot Sauce (1-3 Tbs)
Minced Fresh Cilantro (¼ Cup)

Vegan Sweet Potato Chili with beans and quinoa (Gluten-free)
Quinoa Sweet Potato Chili is one of the many ways to enjoy a hearty, meatless chili that is ready under 30 minutes. This is a quick and easy combination that you can even make for lunch or dinner on busy weekdays. It is flavorful, filling and so delicious.
Ingredients
* 1 Onion
* 3-4 cloves Garlic
* 2 Tomato (medium)
* 1 Sweet potato (large)
* 2 cup Tomato sauce
* 2 cup Red kidney beans or black or pinto or cannellini or mixed whichever you prefer
* 1/2 cup Quinoa
Spices
* 1/2 tsp Sweet smoked paprika powder
* 1/2 tsp Basil
* 1/2 tsp Oregano
* 1/2 tsp Parsley
* Salt and Pepper to taste
* 1/4 tsp Hot chili powder or flakes optional
Instructions
Prepare the ingredients
* Peel and chop onion and garlic. Wash and chop tomatoes. Wash, peel and dice sweet potato. We used canned beans so nothing to do there.
Cook quinoa
* Rinse and drain quinoa well to remove bitterness.
* Add it into a stockpot or pan with double amount of cold water and salt. Bring it to boil.
* Once boiling, turn the heat low. Simmer until the water disappears. Remove from heat and cover with a lid. It should stay covered for 5 minutes. Now, you have fluffy, cooked quinoa.
Make chili
* Take a large pan and cook the chopped onion and garlic in a bit of olive oil. Cook them for 2-3 minutes.
* Next up are the chopped sweet potato. Stir and cook for 3-4 minutes to caramelize them a bit.
* Season it with ground basil, oregano, parsley, sweet paprika, salt and pepper. Stir until combined.
* Add chopped tomatoes, stir well and cook for 2-3 minutes
* Add the tomato sauce now and bring to boil. Cover it with a lid and cook it for 15 minutes or until the diced sweet potato is soft.
* Add canned beans and the cooked quinoa at the very end as they don't need to be cooked, just re-heated.
* You're almost ready! Add the sriracha or any other chili paste (if any) to your taste. Check the seasoning again. Add more salt and pepper to your taste. Now, you're done!

So I decided to do an E-Book focused on using Walnuts & Cauliflower as plant-based meat. Sounds fun?!

Ingredients:
1 - 1 1/2 chili seasoning packets (Chili mix)
12 oz can diced tomatoes
2 cups vegetable broth
½ cup onion, diced
1 jalapeño, diced (or more, if you like it spicy)
2 cups walnuts
½ cup cauliflower, chopped enough to fit into food processor
1 Tbsp chili oil or olive oil
12 oz tomato paste
1 cup of corn
2 tsp minced garlic
2 x 15.5 oz cans kidney beans
1. Add walnuts & cauliflower to a food processor and pulse for 20 -30 seconds (No need to soak the walnuts)
2. Sauté onions & garlic in chili oil
3. Add walnut & cauliflower crumbles to pan and cook until the crumbles are browned
4. Add 4 Tbsp tomato paste, 1/4 cup vegetable broth, and half of the chili seasoning packet to pan. Cook on medium for 5 minutes. Mix well and place to the side
5. In a large pot, combine the remaining tomato paste, diced tomatoes, kidney beans, corn, jalapeño, and vegetable broth. Cook on medium for 5 minutes
6. Add your crumbles and cook for 5 more minutes or until warm throughout
7. Enjoy with your favorite chili toppings
