5 cups white bread flour 2 1/2 cups water -- extra warm 2 teaspoons salt 3 tablespoons sugar 5 teaspoons vital wheat gluten 1 tablespoon yeast 2 tablespoons shortening 1. Dissolve sugar and yeast in 1/2 cup of the extra warm water. Set aside. 2. Meal the salt, vital wheat gluten, and shortening into the flour. 3. Add the remaining 2 cups of extra warm water to flour. Stir. 4. Add yeast mixture. 5. Kneed until all flour is blended and dough is elastic. More flour can be added if dough is too sticky. (You can kneed for awhile, let set for about 5 minutes and then come back to it. This makes it easier to kneed without incorporating more flour) 6. Let rise for 1 1/2 hours, punching down as needed. 7. Separate dough into two parts. Form into loaf size. Place in 2 greased loaf tins. 8. Let rise in tins until double. Bake at 350 F for 40 minutes.

This is How to Take the Basic White Bread to the Next Level
The first video I ever posted on the channel was for a basic white bread recipe. And it sure was as basic as it can get. Flour, water, yeast, and salt baked on the same day. I would guess that this is the kind of bread most people bake on their first try at breadmaking. It’s a great starting point and a good way of practicing the skills for making bread by hand. It does not take a long time and it’s super easy.
Later I published a video about an improved version of the basic white loaf which was made using a pre-ferment. This is a slight step up from the basic white bread as it involves extra preparation. The pre-ferment changes the characteristics of this bread. It gives it more depth of flavour, it makes the crust crispier, and the crumb slightly more substantial.
But that was a long time ago and as most of you know by now, I have all but given up on using pre-ferments in favour of cold fermentation. Cold bulk fermentation develops a lot more flavour than a pre-ferment and it removes the extra step of making a pre-ferment. Basically, we are going back to the first recipe, but instead of making it on the same day, we simply mix the dough and leave it in the fridge for 24 hours to develop.

No-Knead Cherry & Chocolate Brioche Recipe
Brioche is one of my favourite doughs to work with. It is extremely simple to make and it’s super versatile and that is why I keep coming back to it. The brioche playlist on my channel is full of different recipes savoury and sweet. Sweet ones are usually the more popular ones, so I decided to make this cherry and chocolate filled loaf.
I saw a similar recipe on the King Arthur Baking website and thought I could adapt it to my style and turn it into a nice sliceable loaf. Once again, my USA Pan Pullman tin came in handy. It’s been used quite a lot in the last few months and for good reason. It is one of my favourite pieces of baking equipment. You can use a regular 2lb (900g) tin for this recipe.
