1 Box Yellow Cake Mix 1 c Milk 1 Box Instant Vanilla Pudding 1 1/2 oz Whiskey 4 Eggs 1 c Walnuts
TOPPING:
1/2 c Butter 1/2 c Whiskey 1 c Sugar Combine all ingredients. mix 3 minutes. Pour into a well-greased tube pan. Bake at 350 degrees for 50-60 minutes. While cake is baking make topping. Melt butter. Add sugar and whiskey. Cook until sugar is dissolved and of syrup texture. After removing cake from oven, poke holes (with a fork) in the top(leave cake in pan while doing this)/ Pour some of the syrup mixture over cake. Let cake sit in pan 15-20 minutes. Remove cake from pan and brush remaining syrup on sides and top of cake. -----

This recipe made its way into my cake repertoire during my very first summer at the cottage. Friends had come up for the weekend, made it and then served it for dessert. One bite and I was begging for the recipe. This IRISH WHISKY CAKE is really quite fabulous.

A Christmas tradition we keep is serving an Irish Christmas Cake on Christmas Eve. Soaked in Irish whiskey for at least a month, spiced and sweet, this is a treat that simply doesn't compare to other holiday fruitcakes.

Recipe: CAKE 330 ml black coffee 100 g cocoa powder (natural or dutch process is fine) 110 ml whiskey 226 g butter (2 sticks) (plus more for greasing) 290 g granulated sugar 2 eggs 280 g all-purpose flour (or 140g whole wheat flour + 140 g all purpose flour) ½ tsp salt 1½ tsp baking soda
Whiskey Syrup 150 ml whiskey 75 ml water 75 g granulated sugar
Chocolate Ganache Glaze 160 g semisweet chocolate chips 80 ml hot milk (approx. 140ºF)
Bake 45-50 mins at 325ºF

Whisky Butter Cake Recipe (but it could be any flavour!)
Cake Ingredients 750 mL (3 cups) all-purpose flour 5 mL (1 tsp) baking powder 2 mL (½ tsp) baking soda 5 mL (1 tsp) salt 500 mL (2 cups) sugar 250 mL (1 cup) butter, softened 4 large eggs 175 mL (¾ cup) buttermilk 10 mL (2 tsp) vanilla extract 60 mL (¼ cup) whiskey (or your favourite spirit)
Glaze 125 mL (½ cup) butter 250 mL (1 cup) brown sugar 10 mL (2 tsp) vanilla 30 mL (2 Tbsp) whiskey (or your favourite spirit)
Method: Preheat the oven to 325ºF. Grease and flour a 10-cup bundt pan. Cream together the butter and sugar. Beat in the eggs, and vanilla. Whisk together the flour, baking powder, baking soda, and salt. Mix in the flour, buttermilk, and bourbon: alternate between them a little at a time. Mix just until combined. Pour the batter into the bundt pan and spread evenly. Bake for 50 to 60 minutes, just until a toothpick inserted in the centre comes out clean. While the cake is baking; make the glaze. Melt together the butter and brown sugar; stirring until the mixture comes to a boil. Continue cooking until the sugar is fully dissolved. Remove from the heat and stir in the vanilla extract and whiskey. While the cake still in the pan, poke holes all over the bottom of the cake. Spoon about ½ of the glaze over the cake, so it soaks in through the holes. After turning the cake out onto a plate; drizzle the rest of the glaze over the top of the cake.
