Skinny No-Bake Cookies | WEIGHT WATCHERS RECIPE
These cookies were our Papa’s absolute favorite cookie (the full fat version) and now they have become a family favorite. The original recipe is VERY HIGH in WW points. This is a knock off of the original recipes with some ingredient swaps to make it lower in points. Do they taste the same as the original ones? No, but they are a nice alternative when you are craving a chocolatey peanut buttery snack that won’t use your entire days point allowance. If weight is not an issue for you I highly suggest trying the original recipe below:
Original Recipe:
¼ cup Butter
1 cup Sugar
2 TB Cocoa Powder
¼ tsp. Salt
¼ cup Milk
Bring to a boil and continue to boil for only 1 minute after the first bubbles start to appear to avoid over cooking. Then add:
¼ cup Peanut Butter
1 tsp. Vanilla Extract
1 ½ cups Dry Oats
Stir till completely combined. Drop by spoonfuls onto a piece of parchment paper and let cool and harden.
WW Recipe:
1/4 cup I Can't Believe It's Not Butter Light
1/4 cup Unsweetened Almond Milk
12 Pkgs of Sugar Substitute
2 Tbsp Cocoa Powder
1/2 tsp Salt
1/2 tsp Vanilla
4 Tbsp Smooth Peanut Butter
1 1/2 cups Dry Oatmeal
In a pot add the first 5 ingredients. Cook over med-high heat, stir constantly. Once melted take off of the heat. Add Vanilla and peanut butter, stir. Add oatmeal, stir. Form cookies, let cool. Enjoy.

Pumpkin Chocolate Chip Whoopie Pies???????? | WW Friendly (Weight Watchers) All Points???????????? Viewer Request!
Pumpkin Chocolate Chip Whoopie Pies | WW Friendly (Weight Watchers) All Points???????????? Viewer Request! I had a request to do these whoopie pies from a viewer. I had never made whoopie pies before these, let alone a WW version but I had a lot of fun making them!
Makes 9 servings. MyWW SmartPoints per serving with the cream cheese frosting - Green: 7 SmartPoints / Blue: 7 SmartPoints / Purple: 7 SmartPoints. **Other options for filling below**
Ingredients for the Whoopie Pie cookies:
1 cup All-purpose flour
1 cup Canned pumpkin puree
4 Tbsp Brummel & Brown Spread Made with Yogurt
Truvia Natural sweetener with brown sugar blend
1 tsp Baking soda
1/2 tsp Table salt
1 tsp Pumpkin pie spice
2 large Eggs
1 1/2 oz Lily's Semi-sweet style baking chips
In a medium bowl, mix together flour, baking soda, pumpkin pie spice and salt, and set aside. In a mixer, mix eggs and Truvia brown sugar blend for about 3-4 minutes. Add in melted Brummel and Brown and pumpkin, mix until well combined. Fold in chocolate chips. Put batter in a pipping bag or a zip lock bag with the corner cut off. Pipe the batter onto a cookie sheet with parchment paper, into 18 equal amounts. Bake at 350 for 10-12 minutes or until they bounce back when you press on them. Let them sit on the cookie sheet for about 5 minutes once you have removed them from the oven. Then place them on a cooling rack to cool completely.
For the cream cheese filling:
4 oz 1/3 less fat cream cheese (softened)
1/4 Jet Puffed Marshmallow Creme
1 cup Swerve confectioners sugar (as I said in the video, this was way too sweet for us,
4 Tbsp Brummel and Brown spread
Mix together all ingredients together well until well combined. Put filling into pipping bag or ziplock bag, and pipe onto 9 of the cooled cookies on the flat side. Top with remaining cookies.
**As I mentioned in the video, this frosting was way too sweet for our taste. If you are sensitive to sweeteners like us, I would recommend starting with 1/2 cup of the Swerve confectioners and going from there. Or, cutting the amount of frosting in half which would make these 6 Pts on all colors. Another option is to use just the Marshmallow creme. You can use 1/2 - 1 cup which would also make these 6 Pts on all colors.
