RED VELVET CAKE
Grease & flour 3 9-inch round cake pans. Set aside.
Preheat oven to 350 degrees F.
1/2 cup butter, softened
1 1/2 cups sugar
2 teaspoons vanilla extract
2 eggs
2-ounces (2 tablespoons) red food coloring
1 cup whole buttermilk
1 tablespoon vinegar
2 1/2 cups all-purpose flour
2 tablespoons unsweetened cocoa powder
1 teaspoons baking soda
1 teaspoon salt
1. Cream butter, sugar and vanilla extract together with an electric mixer for 2 minutes. Add eggs, 1 at a time, and beat an additional 1 minute.
2. In a medium bowl whisk flour, salt and cocoa together. Set aside.
3. In a small bowl add baking soda and vinegar. Whisk. Set aside.
4. Add buttermilk and red food coloring together. Whisk well. Set aside.
5. Alternate 2 batches of flour mixture, buttermilk and food coloring to butter mixture. Add baking soda and vinegar. Beat for 2 minutes between flour and buttermilk mixture batches until well mixed.
6. Divide cake batter between the 3 prepared cake pans (about 2 cups of batter in each pan).
7. Bake in preheated 350 degree F. oven for 20-25 minutes.
8. Cool cakes in pan for 10 minutes. Carefully, remove cakes and cool completely on cooling racks.
9. To assemble, add 1 cake layer on serving platter. Spoon about 1 cup of cremates frosting to top of cake. Spread evenly with the back of a spoon of a spatula. Add second cake layer to top of frosting. Add another cup of icing and spread evenly. Add final cake layer. Frost the side of three layered cake. Add remaining frosting to top of cake.
CREAM CHEESE FROSTING
3 cups (24-ounces) cream cheese, softened
1/2 cup (1-sticks) unsalted butter, softened
2 cups powdered sugar
1. In a large bowl add cream cheese and butter. Using a mixer on medium-speed mix mixture for 3 minutes. Add powdered sugar. Beat an additional 2 minutes.
TIPS: Keep cake covered and refrigerated until ready to serve.

+ 1 teaspoon baking powder
+ 1 teaspoon baking soda
+ 1/2 teaspoon salt
+ 1 cup buttermilk
+ 1 tablespoon red food coloring
+ 1 teaspoon distilled white vinegar
+ 1 teaspoon vanilla extract
+ 1 1/2 cups sugar
+ 1/2 cup (1 stick) unsalted butter, room temperature
+ 2 large eggs
CREAM CHEESE FROSTING RECIPE:
+ 2 8-ounce packages cream cheese, room temperature
+ 1/2 cup (1 stick) unsalted butter, room temperature
+ 1 tablespoon vanilla extract
+ 2 1/2 cups powdered sugar
HOW TO MAKE RED VELVET CAKE
0:00 PREHEAT the oven to 350°F. Butter and flour two 8-inch cake pans with 1 1/2-inch-high sides. Sift together the flour, cocoa powder, baking powder, baking soda, and salt into a medium bowl.
0:15 WHISK buttermilk, food coloring, vinegar, and vanilla in a small bowl to blend. Cream the sugar and butter together in the bowl of a stand or electric mixer, until well blended.
0:25 ADD the eggs 1 at a time, beating until well blended after each addition. Add the dry ingredients in 4 additions alternating with the buttermilk mixture in 3 additions.
DIVIDE batter between prepared pans.
0:35 BAKE cakes until the tester inserted into the center comes out clean, about 27 minutes. Cool in pans on racks for 10 minutes. Turn cakes out onto racks lined with parchment paper; cool completely.
0:45 MAKE the frosting by creaming together the cream cheese and butter in the bowl of a stand or hand-held electric mixer, until smooth. Beat in vanilla. Add powdered sugar and beat until smooth. PLACE 1 cake layer, flat side up, on a platter or cake stand. Spread 1 cup of frosting over top of the cake. Top with second cake layer, flat side down. Spread remaining frosting over top and sides of cake.
*The cake can be made one (1) day ahead. Cover and refrigerate. Let stand at room temperature one (1) hour before serving.
