The original Red Velvet Cake recipe is well known in the United States from New York City’s famous Waldorf-Astoria Hotel, dubbed the confection Waldorf-Astoria cake. However, Red velvet cake is widely considered a Southern recipe and has been adopted by traditional Southern home bakers. The red velvet cake is so ensconced in Southern culture these days that no Southern church cookbook is complete without a recipe. It is often served as a celebration cake during special occasions such as Christmastime and birthdays.
