Hello my friend! ???? Today I’ll show you the best pate you have ever eaten! It is super simple, tasty and healthy - vege pâté recipe. If you are looking for vegan pâté – you are in the right place. Here is the full recipe for approx. 1250g of pate:
Ingredients:
- 200g of millet groats;
- 150g of walnuts;
- 100 ml of oil;
- 2 carrots (300g);
- 2 parsley roots (300g);
- a piece of leek (80g);
- 2 stalks of celery (170g);
- 1 clove of garlic;
- 3 tablespoons of soy sauce (30ml);
- 3 bay leaves;
- 3 allspice berries;
- 1 tablespoon of marjoram, dried parsley, lovage and thyme;
- 1 teaspoon of salt and pepper;
- a pinch of nutmeg.
I used a bread pan with the following dimensions:
- length: 24 cm;
- width: 10 cm;
- height: 7,5 cm.
1. Start with a leek: cut off the end and cut into slices.
2. Pour olive oil into a hot pan and add the leek, fry for a while until glazed.
3. Add 3 bay leaves, 3 allspice berries, mix well and stew on low heat.
4. Now the carrots: cut off the ends, peel, grate and set aside.
5. The same with a parsley root: peel, grate and set aside.
6. Now celery: cut into smaller pieces and set aside.
7. Then garlic: break off a clove, peel, chop and add to the rest of the vegetables.
8. Add everything to the leek, mix thoroughly, cover and stew for about 15 minutes, until the vegetables are tender, and when ready, cool.
9. Now millet groats: put into a pot with water in a ratio of 2:1 (water : millet groats), mix, add a little salt and cook, covered, for about 15 minutes over medium heat, then cool.
10. Then walnuts: put them in the grinder and grind (preferably divide the grinding into several times), then put the ground nuts in a bowl.
11. Get rid of the allspice and bay leaves, and then transfer the vegetables to a large bowl.
12. Add the remaining ingredients: cooked millet groats, ground walnuts, spices, oil and soy sauce.
13. Mix everything thoroughly, transfer to a food processor and mix until smooth.
14. Sprinkle the bread pan with olive oil and then spread it thoroughly.
15. Put the mass and spread it evenly.
16. Put in an oven preheated to 200 ° C for approx. 45 min - 1h, until the pate has a golden brown top.
17. When it's ready, take out and cool, preferably overnight.
18. Put the cooled pate on a cutting board and cut.
