2 Eggs 1/2 c Shortening 1 ts Cream of tartar 1 1/2 c Flour; (1 1/2 to 2) 1/2 ts Baking soda 1/2 ts Salt 1 c Sugar 1/2 ts Vanilla Cream shortening and sugar. Add well-beaten egg yolks. Sift flour. Measure 1/2 cup and sift with cream of tartar, salt, and baking soda. Combine with egg mixture. Mix thoroughly. Add stiffly beaten egg whites and flavoring. Add sufficient flour to make a soft dough. Turn onto lightly floured board. Roll in sheet 1/8 inch thick. Cut with floured cutter. Place on slightly oiled baking sheet. Bake in hot oven (400 F) about 10 minutes. 50 servings. -----

This is a simple, yet delicious recipe and an absolute staple of the kitchen.
Vanilla Wafers: 1/2 cup (125g) butter 2 cups (250g) powdered sugar 3 egg whites + 1 whole egg 1 1/3 cups (170g) flour 2 tsp vanilla extract or 2 tbsp vanilla sugar pinch of salt Cream butter and powdered sugar until smooth and fluffy. Beat in eggs one at a time. Briefly combine flour, vanilla and salt. Do not overbeat with the flour. The dough will be quite thin. Place in a piping bag with a round tip or no tip. Pipe small cookies shapes onto a lined baking sheet leaving lots of space between them. Bake at 350°F or 180°C for about 6-8 minutes or until cookies begin to brown.
