This is a taste test/review of Hughes Home Maid Chocolates in nine flavors including vanilla cream, maple cream, coconut cream, meltaway, pudding, toffee, caramel, nougat and pecan cluster. They were mailed to us from Austin & Amanda!
* Vanilla cream – creamy vanilla center covered in milk chocolate
* Maple cream – creamy maple center with finely ground pecans
* Coconut cream – creamy coconut center with tiny flakes of real coconut
* Meltaway – a solid milk chocolate center that melts in your mouth
* Pudding – a softer double chocolate center
* Toffee – English toffee with a brittle crunch
* Caramel – chewy caramel center
* Nougat – white chewy center with pecans, marshmallow & honey
* Pecan cluster – pecans in chocolate

Back pocket recipes are the ones you can go to over and over again without thinking or working too hard. They're the ones that save you because they're delicious, adaptable, and so, so easy.
This muffin recipe is made in one bowl and can be adapted so many ways. The basic batter recipe is below, but watch for notes on adjusting sugar and toppings to make this healthier, sweeter, savory, with veggies -- however you like.
And BONUS: These freeze beautifully too. Watch 'til the end for notes on how to store and defrost/re-warm.
ONE-BOWL, ALL-PURPOSE MUFFIN MIX
INGREDIENTS
4 tablespoons (half stick) unsalted butter, melted and cooled
1 cup all-purpose flour
1 cup whole wheat pastry flour
1/2 cup sugar
1 tablespoon baking powder
1 teaspoon salt
1 cup milk of choice
1 large egg, ideally at room temperature
Add-Ins (watch & read below for details!)
DIRECTIONS
1. Preheat oven to 400 degrees. Melt butter and set aside to cool.
2. In a medium bowl, whisk together flours, sugar, baking powder and salt.
3. Create a well in the middle of the dry ingredients. Add the milk, egg, and cooled, melted butter and whisk together a little bit. Then, using a silicone spatula or wooden spoon, fold the wet and dry ingredients together.
4. Add your mix-ins, anywhere from 1/2-1 cup of chips (chocolate, butterscotch, white chocolate, cinnamon, etc), 1/2-1 cup fresh fruit or grated (squeezed dry) veg, 1/2-1 teaspoon ground spices, 1/2-1 teaspoon extract, etc.
5. Evenly divide batter between the 12 wells of a paper-lined muffin pan. Bake for 18-22 minutes, until a toothpick inserted into the center comes out clean. Allow to cool in the pan for 5 minutes before transferring to a rack or the counter to finish cooling.

Tasting Rare Snacks and Drinks
Skittles Cookies. Caramel Apple Oreos. White Chocolate M&M's. Potato chips that make your mouth cold with the same sensation you get from ice cube gum. I spent months searching the globe for the rarest snacks, candies, chocolates, and drinks I could find. These came from all different countries, and not surprisingly, when some arrived, they'd been quite shaken up. Some of the drink cans were clearly beaten and weathered. A few of the chip bags had expanded and then been crushed, likely from altitude changes from flights. But, ultimately, they all landed safely in my kitchen. Watch me taste and break down all of them!
On a separate note, I want to offer a MASSIVE congratulations to our two winners, both of whom I will be sending (with their +1) to a three Michelin starred meal.
