How To make Tyropites
1/2 lb Ricotta or cream cheese
1/2 lb Feta cheese; crumbled
2 Eggs; lightly beaten
1 T All-purpose flour
1 pn Salt (optional)
1/2 t Grated nutmeg (or more)
1 c Butter; melted
3 T Butter; melted
1 lb Commercial filo sheets
In a bowl combine the cheeses, eggs, flour, salt (unless the feta is very salty) nutmeg, and 3 tablespoons butter. Cover the bowl and chill several hours or overnight, removing from the refrigerator an hour before using. Cut the filo into thirds (3 x 11 inches). Pile up the filo, covering it with waxed paper and a damp towel. Take out one sheet at a time and keep the rest covered. Butter the filo, one sheet at a time, using a pastry brush and the 1 cup melted butter. Place 1 teaspoon of the filling 1 inch from the end nearest you. Fold the filo back over the filling so the bottom edge meets the left edge, forming a right angle. Continue folding back at right angles to make the triangular shape. Bake in a moderate oven (350 degrees) for 20 to 25 minutes or until golden and crisp, turning once. Serve hot. Note: Tyropites may be stacked upright in cardboard boxes and frozen. When ready to bake, separate while still frozen, spread on baking sheets, and bake as directed above, allowing an additional 10 minutes baking time. Greek Pita recipe. A yummy tiropita with homemade filo pastry.
A few weeks earlier, I filmed my mum making a Greek tiropita. This was my attempt to copy her recipe.

So kids (as I put my teacher hat on), don't worry if, when you are taught something by your teacher, you don't understand it immediately. Practice it and you will get better!!
So many things went wrong, but it was worth the effort. So is all of the education we receive both at school and in life!!
The Recipe:
I now use 2 baking trays 30 cm x 20 cm x 3 cm with the recipe below.
Ingredients:
480 g flour
300 g warm water
About 2 tbsp. salt
Olive oil (Greeks rarely say “olive oil”, they just say oil; there is no need to specify what kind because there is no other kind!!)
About 1 tbsp. sugar
4 eggs per tray (this recipe is for two smaller trays)
220 g feta per tray (which is about 1 slab, or “feta”, from the Dodoni feta container)
These last two are prepared in separate bowls for ease of preparation.
Instructions:
Mix the water, salt, sugar and a dash of oil. Pour in the flour. Mix and knead dough. Roll out into snake and then cut into 16 pieces (8 per tray). This allows a 3:2:3 configuration (3 layers of filo down first, egg/feta mixture, 2 filo layers, more egg/feta, three more layers). Flatten dough ball and leave for 30 minutes.
Prepare egg and feta mixture.
Roll out each filo with a rolling pin and lay onto tray. Pour a little oil and then repeat. (My mum rolled out all the filos (in Greek plural, the “fila”) first, but I don’t. I roll out and place!
Bake at 180°C for about 35 minutes.

Tiropita: Greek Feta & Phyllo Pie

Ingredients
1-1 and 1/2 pounds of feta cheese
1 pound ricotta cheese
6-8 slices Muenster cheese, Gruyere, or Gouda (optional)
2 eggs
2 tablespoons olive oil
2 tablespoons finely chopped mint
1/4 teaspoon ground black pepper
1 pound (#4) phyllo, thawed and at room temperature
8 oz butter, melted
Instructions
Preheat the oven to 375 °F, 190 °C.
Combine the ricotta, mint, and pepper in a large mixing bowl. Crumble the feta and add to the mixture. Mix to combine. Taste and season with salt if needed.
Beat the eggs and add them with the olive oil. Mix together until incorporated.
Grease a 9 by 13-inch (25 by 35cm) baking dish with butter.
Lay one sheet of phyllo on the bottom of the pan and drizzle with melted butter.
Place the second sheet of phyllo half inside the pan and the other half hanging outside beginning with the left side of the pan. Drissle the top with butter and continue lining the pan with phyllo until you go all around the pan. (See Video)
Spread the cheese mixture in the center of the pan. Place the cheese slices over the cheese filling. This is optional.
Fold the phyllo that is hanging outside of the pan over the filling and drizzle it with butter.
Take one sheet of phyllo at a time and scrunch it together to form an accordion and place them on top of the pie.
Brush the top and sides of the pie with the remaining melted butter.
Bake the pie on the center rack of the preheated oven for 45 minutes or until golden.
Allow the tiropita to sit at room temperature for 15 minutes before serving.

Notes
Freezer Instructions: Wrap the unbaked tiropita pie with plastic wrap and store in the freezer up to 3 months. Either thaw it overnight in the refrigerator or bake it frozen. To bake it frozen remove the plastic and cover the pie loosely with foil. Bake at 375 °F for 40 minutes. Uncover and bake until golden.
The leftover pie can also be frozen and then warmed through in the oven until crisp when ready to eat.
