How to Make Turtle Cookies
Turtle cookies are delicious chocolate cookies, rolled in pecans, filled with melted caramel and drizzled with melted chocolate.
???? Ingredients ????
For the cookies:
▢ 1 cup all-purpose flour
▢ 1/3 cup unsweetened cocoa powder
▢ 1/4 teaspoon salt
▢ ½ cup butter
▢ 2/3 cup granulated sugar
▢ 1 large egg, separated
▢ 2 Tablespoons milk
▢ 1 teaspoon vanilla extract
▢ 1 cup pecans, finely chopped
For the Caramel:
▢ 2/3 cup Kraft Caramel Bits or regular caramels, melted
▢ 1/2 teaspoon water

Combine flour, cocoa and salt. In a separate bowl cream together the butter and sugar until light and fluffy. Mix in the egg yolk, milk and vanilla. Stir in flour mixture, just until combined. Chill dough in the refrigerator for one hour.
Whisk egg whites in a bowl until frothy. Place chopped pecans in another shallow bowl. Remove dough from fridge and roll into small balls.
Roll each dough ball in the frothy egg whites, and then roll and press in the chopped pecans. Place on a greased baking sheet.
Use the back of a small measuring spoon to make an indentation in the center of each dough ball.
Bake at 350 Degrees F for about 10-12 minutes, or just until set. Don't over-bake as cookies will harden as they cool.
As the cookies come out of the oven, gently re-press the indentations with a small spoon.
In a microwavable bowl mix the caramel bits and water. Microwave at 30-second intervals, stirring after each interval, until caramel is melted (1-2 minutes). Pour small spoonfuls of caramel into the indented cookies. *Optional: Drizzle with melted chocolate (or sprinkle with sea salt)

Turtle Candies - Day 2 of the Twelve Days of Christmas
Turtle Candies
Pecan halves
11 ounce bag Kraft caramels
2 Tablespoons heavy whipping cream
12 ounce bag semi sweet or dark chocolate chips
Place four pecan halves into an x shape on a parchment lined baking sheet.
Melt caramels and whipping cream in microwave. Microwave one minute then stir. Melt in 30 second increments until the caramel is melted. Place a small spoonful of caramel in the center of the pecan halves.
Allow these to cool on counter or in the refrigerator for 30 minutes to an hour or until the caramel is firm.
Melt chocolate chips in the microwave the same way you did the caramel. Cover the caramel with the chocolate then place the candy back into the refrigerator so it cools and the chocolate hardens.
Store in an airtight container.

Baking times:
Failure to use parchment or silicone will result in a cookie sticking to the pan.
Allow the cookie to cool completely before eating as caramel is quite hot when melted.
If using a darker pan, reduce temperature 25F (4C) and bake an additional 5 - 10 minutes to prevent over browning.
Let cookies sit 3-5 minutes before removing to a wire rack to finish cooling.

Ingredients:
1 cup all-purpose flour
1/3 cup unsweetened cocoa powder
1/4 tsp salt
1/2 cup butter, softened
2/3 cup sugar
1 egg, separated
2 tbsp milk
1 tsp vanilla extract
1 cup pecans, finely chopped
2/3 cup Kraft caramel bits, melted
1/2 tsp water
Directions:
To a bowl, cream together the butter and sugar. Add in the egg yolk, milk and vanilla extract, and mix until combined.
Add in the dry ingredients and mix until combined. Chill the dough for 1 hr in the fridge.
After 1 hr, froth the egg white and, in another separate bowl, dump in the finely chopped pecans.
Scoop out a tbsp's worth of cookie dough, roll it into a ball and drop it in the egg white. Coat the dough ball, then move it to the pecans and coat with nuts. If you need to, press the nuts into the dough ball to help them stick.
Then, place your coated dough ball on a baking sheet lined with parchment paper. With a 1/2 tsp measuring spoon, press the bottom of the spoon into the top of the dough ball creating a well. Do this for all dough balls.
Into a preheated oven at 350 degrees for 10-12 minutes. Let the cookies cool for 1-2 minutes before moving to a cooling rack.
For the caramel: Melt the caramel bits with the water in the microwave for 30 second intervals, stirring between each interval. This might take about 1-2 minutes. *Note* If you don't stir the caramel, you risk overheating it, which WILL cause it to harden rock hard.
Melt some chocolate melting candies or regular chocolate chips for a pretty drizzle as a finishing touch...if you want. :) Enjoy!
