How To make Turtle Cheesecake
6 tb Reduced calorie margarine
1 1/2 c Graham cracker crumbs
2 pk Unflavored gelatin (these
-are the individual en- -velopes) 2 ct (8 oz each) fat-free cream
-cheese * 2 c 1% low-fat cottage cheese**
1 c Sugar ***
1 1/2 ts Vanilla
1 ct (8 oz) reduced fat nondairy
-whipped topping; thawed 1/4 c Prepared fat-free caramel
-topping 1/4 c Prepared fat-free hot fudge
-topping 1/4 c Chopped pecans
* I used light cream cheese in place of the fat-free but feel that the consistency would be the same either way. ** I used the low-fat cottage cheese as called for, but results probably would be about the same with the fat-free (sometimes the fat-free makes a recipe gummy so I'm skeptical of trying it on a new recipe). *** I substituted half the sugar for fructose and will be experimenting with the other diabetic sweeteners, my husband being a type II diabetic. Preheat oven to 350 degrees F. Melt margarine in small saucepan over medium heat. Stir in graham cracker crumbs. Press crumb mixture firmly onto botton of 10-inch springform pan. Bake 10 minutes. Cool.
Place 1/2 cup cold water in small saucepan; sprinkle gelatin over water. Let stand 3 minutes to soften. Heat gelatin mixture over low heat until completely dissolved, stirring constantly. In food processor or blender combine cream cheese, cottage cheese, sugar and vanilla; process until smooth. VERY IMPORTANT!!!!! (From my own experience you'll have a mess on your hands and everywhere else if you don't use a food processor rather than the blender. The ingredients are MUCH too thick for a blender to handle; it blended perfectly when I switched to the small food processor attachment on my Oster.) Add gelatin mixture; process until well blended. Fold in whipped topping. Pour into prepared crust. Refrigerate 4 hours or until set. Loosen cake from rim of pan. Remove side of pan from cake. Drizzle caramel and hot fudge sauce over cheesecake (sort of horizontal lines drizzled all the way across the cake). Sprinkle pecans evenly over top of cake before serving. The Best Turtle Cheesecake You'll Ever Try!
I always make this cheesecake whenever there is a get together or party. It's always a big hit and gone in minutes, so I thought I'd share it with you guys♡

CRUST
1 1/2 pkg of chocolate graham crackers (crushed)
1/3 c margarine (melted)
FILLING
3- 8oz pkgs of cream cheese
1-14oz can of sweetenesd condensed milk
1/2 c sugar
3 eggs
3 tbsp lemon juice
1 1/2 tbsp vanilla extract
3/4 c chocolate chips (for chocolate swirl)
TOPPINGS
About 3 spoonfuls of hot fudge sauce (warmed)( i use Mrs. Richardsons, so good!)
About 3 spoonfuls of caramel sauce (warmed)
1/4c chopped pecans
INSTRUCTIONS
1. Mix crushed graham crackers and melted butter together in a bowl then press into bottom of springform pan and about an inch up the sides.
2. Beat cream cheese and sweetened condensed milk together until creamy
3. Add the remaining filling ingredients until well combined (except chocolate chips)
4. Remove 1c of the filling and set aside.
5. Melt chocolate chips and stir into the 1cup of filling.
6. Pour 1/2 of white filling into pan wit the crust, then add the chocolate filling, add remaining white filling last. ( swirl layers together as shown in video)
7. Place a pan 1/2 full with water on bottom rack to help with moisture ( as seen in video)
8. Bake at 300°F for about an 1hr and 15-30 minutes until top is light golden brown, edges are set and the middle moves slightly.
9. After cheesecake is done, Turn oven off but leave cheesecake in oven to cool for about 1 hour. Then remove and chill in fridge.
10. Once chilled, remove cheesecake from pan and transfer to serving board or plate.
11. Melt some hotfudge in the microwave for about 10 seconds so that its spreadable. Spread the fudge over the top.
12. Chop pecans and place them on top of the fudge
13. Drizzle caramel sauce over the fudge and pecans
14. Place in fridge until it is ready to be served

No Bake Turtle Cheesecake | The Recipe Rebel
This NO BAKE Turtle Cheesecake is made with a chocolate cookie crust, salted caramel pecan layer, luscious cheesecake layer and a thin layer of chocolate ganache. Top it with whipped cream, caramel and pecans for a decadent treat!
Ingredients
Crust
2 1/2 cups chocolate cookie crumbs like Oreo or similar
1/2 cup butter melted
Caramel:
30 wrapped chewy caramel candies (I use Kraft) - 250g
1 cup heavy cream
1/8-1/4 teaspoon salt (depending on how salty you like your caramel)
1 cup chopped pecans
Cheesecake:
24 oz cream cheese, room temperature 3 packages, 750g
1 1/2 cups powdered icing sugar
1 teaspoon vanilla
1/2 cup heavy whipping cream
Ganache:
1/3 cup chopped dark chocolate or chips 50g
1/3 cup milk or cream
Optional: caramel sauce, whipped cream and pecans for garnish
Instructions
Line a 9 Springform pan with parchment paper, pinching it in between the bottom and the outer ring. This isn't necessary but will allow for easy removal.
Crust
Combine cookie crumbs and butter. Press into the bottom of the prepared pan evenly.
Caramel
In a medium pan, combine caramels and cream. Cook over medium heat, stirring frequently, until completely smooth and melted.
Stir in pecans and pour into crust. Refrigerate for 30-60 minutes until firm/dry to the touch.
Cheesecake
With an electric mixer, beat cream cheese until smooth. Add powdered sugar and vanilla and beat until smooth and combined.
Add cream, and beat on low until incorporated, then high until thickened and fluffy (should nearly hold stiff peaks when you pull the beaters out of the bowl)
Spread over cooled caramel in pan. Refrigerate for 1-2 hours or until nearly set.
Ganache
Combine chocolate and cream in a small pan. Cook over low heat, stirring constantly, until melted and smooth.
Spread over cheesecake layer evenly.
Refrigerate a minimum of 6 hours, or overnight for best results. Serve with garnishes as desired.
