Ingredients
1 box of elbow pasta (also works with other pasta shapes : )
Rotisserie chicken (I prefer the breast of this recipe)
3 1/2 cups of mayonnaise
1/4 cup of Dijon mustard (if you love mustard you will love 1/2 cup: )
1 tsp of thyme (fresh or dry)
1/2 tsp white pepper
1 green onion
Optional- 1 tsp garlic & herb Kinder’s seasoning
Tip❣️
To preserve longer than 7 days - use 1 tsp apple cider vinegar in the dressing
Using yellow mustard will not have the same flavor profile and it won’t be as good. Edible yes, but not great.

▢12 oz (340g) orzo pasta
▢1 1/2 cups (1 pint) mixed color cherry tomatoes
▢1 cup (180g) Kalamata olives - pitted and halved
▢1/2 bunch fresh parsley - chopped
▢1 medium red onion - diced
▢1/3 cup (18g) sun-dried tomatoes - drained and finely chopped
▢3/4 cup (75g) Parmesan cheese - shaved
▢2 cups (280g) cooked leftover turkey - chopped
▢1/2 cup (54g) sliced almonds
Dressing:
▢juice of 1 lemon
▢1/4 cup (60ml) extra virgin olive oil
▢1 clove garlic - pressed
▢1 tbsp (15ml) Dijon mustard

- Swap the cooked turkey for rotisserie chicken, deli beef chicken, or small-chopped salami or sausage.
- In terms of veggies, you can mix and match with whatever you have on hand! Try bell peppers, onions, cucumbers, corn, celery, diced zucchini, the options are endless!
- You can swap the cooked meat for canned tuna for a meat-free version.
- Try using a different type of small dry pasta, like stelline (kids will love these), orecchiette, or ditalini.
- Or, use cooked rice instead of pasta.
How to Make the Best Mediterranean Orzo Salad with Sundried Tomatoes
