1/2 c White sugar
1/2 c Brown sugar
1/2 c Shortening
1 Egg
1 c Crushed pineapple
1 1/2 c Oatmeal
1/2 ts Salt
1/2 ts Cinnamon
1/8 ts Nutmeg
1/2 c Nuts; chopped
1 c Flour; sifted
1/2 ts Baking soda
Mix all together well. Drop by teaspoonfuls onto ungreased baking sheet. Bake 375~ about 15 minutes. -----

Tropical Kiwi Oatmeal Cookies
How to use kiwi fruit and bananas to make your oatmeal cookies tropically delicious.
Serves 6-8 Difficulty - very easy. If you are working on health and wellness but sweets are your downfall, this recipes gives you what your body wants. These cookies make the best of both worlds. Healthy and just sweet enough to support your gut in a healthy way.
I love these with the tropical doTERRA essential cuisine blend. They make a winning combination with ginger and kiwi! You won’t believe how quickly these blend-up. It makes about 1 dozen depending on the size and fits perfectly on a cookie sheet. Healthy and super yummy!
Ingredients:
2 ripe bananas
1 1/4 cup oats
1/4 cup dried coconut
1/8 cup pepitas
1/8 cup dried fruit finely diced (I used golden raisins and a few Craisens)
2 tbsp SWEETENER, xylitol or stevia in the raw or 1/2 tbsp monk fruit
2 tbsp almond flour
1 tsp vanilla
1/2 tsp cinnamon
1 tsp fresh grated ginger or 1/4 tsp ginger powder
1 kiwi finely sliced with liquid squeezed out
8 drops tropical doTERRA cuisine essential oil
Directions: First, mash ripe bananas. Add rolled oats, add chopped dried fruit. Stir and them form into flattened balls. Drop from a spoon on to cookie shapes and push pieces together so they stick because how they look is how they bake. Bake at 350 for 15 min then turn off the oven and let them sit and dehydrate till done. These press together if you hold them a second and press. Have faith and just cook them. Bake at 350 degree oven for about 12-15 minutes. If you don't eat them all up these store well in baggies in the freezer for a quick treat. I took a little extra cinnamon 1/4 tsp and xylitol 1 tbsp to sprinkled it on top to give it a little extra sweetness if you're serving to kids or guests. It's fine plain too.

These oatmeal cookies are so good. You can add in whatever dried fruit, nuts, chocolate or other chips you like. Today I am using a dried tropical fruit mix. So SIMPLE...I hope you give these a try. SIMPLE FOOD SIMPLE LIFE IS ON FACE BOOK
OATMEAL COOKIES MADE YOUR WAY
2 c. All purpose flour
2 tsp. Baking Powder
½ tsp. Baking Soda
pinch of salt
2 tsp cinnamon (if you add in chips skip the cinnamon if you like)
1 c. butter or margarine
1 cup brown sugar
2 eggs
2 c. oats
1 c. dried fruit, nuts, chips or a combination (if you use chips use the whole 12 oz. package)
Mix or sift all dry ingredients together except sugar. Melt butter then add sugar mixing well. Mix in the dried fruit etc to the dry ingredients. Stir in the melted butter and sugar to the dry ingredients then add both eggs. Mix well. Place in the refrigerator for about 10 minutes until the oven preheats to 350 degrees. Place equal scoops of the cookie dough mixture on a baking sheet. Press each cookie with your palm to flatten slightly before baking. Bake for 12 minutes. Let rest on baking sheet for a minute or two before removing to a rack to cool. Store in an airtight container. Makes about 3 dozen cookies.

Ingredients:
1/2 cup (45g) Rolled oats
1 tablespoon Chia seeds
1/2 cup (45g) blueberries
Pinch salt
1/4 cup (70g) Greek yogurt
1-2 teaspoons Maple syrup
1/2 cup (120ml) Almond milk or any milk of your choice

2oz (60g) Pineapple
Pinch salt
1/4 cup (70g) Greek yogurt
1-2 teaspoons Honey/Maple syrup *optional
1/2 cup (120ml) Coconut milk or any milk of your choice
1 tablespoon Desiccated coconut
1/2 teaspoon Vanilla extract
Pineapple chunks and desiccated coconut for topping
Peanut butter & jelly overnight oats:
Ingredients:
1/2 cup (45g) Rolled oats
1 tablespoon Chia seeds
Pinch salt
1/4 cup (70g) Greek yogurt
1/2 cup (120ml) Almond milk or any milk of your choice
2 tablespoons Natural peanut butter
2 tablespoons Fruit jam of your choice
Crushed peanuts and natural peanut butter for topping
Directions:
1. Place all ingredients into a large glass container/bowl and mix until combined.
2. Transfer to a jar or a glass. Place in the fridge for at least 4 hours or overnight.
