S'more Oatmeal Cookie Recipe
A fun tutorial on baking cool cookies. The Canada Day long weekend is approaching and we have s’mores on our minds. Even if you do not have a fire pit, this cookie recipe is sure to give you your long weekend fix.
Bringing together the soft comfort of an oatmeal cookie and the nostalgia that comes with a summer s’more. Enjoy these feel-good cookies any time without ever having to strike a match.

FULL RECIPE
1 cup all purpose flour
½ teaspoon baking soda
¼ cup salted butter
¼ cup shortening/Crisco
½ packed brown sugar
¼ granulated sugar
1 egg
2 teaspoons of milk
¾ cup old fashion rolled oats
¾ cup quick oats
½ semi sweet chocolate chips (mini if you can)
3-4 milk chocolate bars
8-10 graham crackers
1 cup mini marshmallow
In a large mixing bowl, cream together butter and shortening. Add granulated and brown sugar and egg and mix well. In a separate bowl combine flour, baking soda and cinnamon and whisk together before adding to wet ingredients. Mix until fully combined.
Take half your graham crackers and chocolate bars and cut them into small pieces and add them in. Don’t forget your chocolate chips too!
With a 3-3.5 inch cookie scoop, evenly place 10 cookies on your baking sheet. Break up the remaining graham crackers and chocolate bars and stick them onto of each cookie.
Bake cookies in oven at 375 degrees Fahrenheit. After the first 5 minutes, open oven and place 3 to 6 marshmallows on each cookie. Close oven and continue baking for 5 to 6 minutes. Cookies are done when they are firm to the touch but still too soft to pick up.
NOTE: If your marshmallows still need some more colour, turn on your broiler for 60 to 90 seconds. Remember to turn it back to baking before you put in your next tray of cookies.
Remove cookies from the oven and let them cool for 10 to 15 minutes on cookie sheet before transferring to cooling rack.
