16 ounces linguine 6 medium to 8 fresh roma tomatoes
chopped 1 pound mozzarella cheese (regular or light) :
grated 1/3 cup fresh basil
chopped 6 cloves garlic :
minced 1/2 cup olive oil 1/4 teaspoon to 1/2 tsp. garlic salt freshly ground pepper to taste Cook pasta according to package directions. Combine all ingredients except pasta and let sit at room temperature. Tos s with hot cooked pasta. It may be necessary to microwave tossed pasta for 2 t o 3 minutes so cheese will melt a little and ingredients will combine better. Makes approximately six 2-cup servings.

Nduja Pasta Sauce
Hello and welcome to Tony's Comfort Kitchen. This spicy nduja pasta sauce is a delight. Quick to make, so great as a mid-week dinner, and simple to make too. If you can't get hold of nduja locally then I've provided a link to the jar I bought below.
ingredients 200g pasta (conchiglie, penne, spirali etc) 1 tbsp olive oil 1/2 onion finely chopped 1/2 red pepper finely chopped 2 cloves garlic finely chopped 500ml tomato passata 120-130g nduja sausage meat salt and pepper to taste finely chopped parsley to serve parmesan to serve
