2 tb Capers
1/4 c Chopped fresh basil
1/4 lb Fresh mozzarella; finely
-chopped 2 tb Balsamic or red wine vinegar
4 tb Olive oil
Salt and pepper 4 sl Toasted italian bread
Recipe by: TVFN How to Boil Water-Show #BW8354 Preheat broiler. In a large bowl combine tomatoes, onion, capers, basil and mozzarella. Stir in balsamic vinegar and olive oil. Season with salt and pepper. Top toasted bread with the mixture and place on baking sheet. Broil until cheese melts. Serve hot. Alternative: Substitute 1 cup canned northern white beans for cheese and just top toasts with mixture. -----

Easy Bruschetta With Fresh Mozzarella, Tomatoes and Basil
Bruschetta is an extremely simple dish that requires no particular culinary skills. All it takes, is a very short list of ingredients and excitement towards creating it. It delivers something you might be missing: an instant comfort and joy! Bruschetta is great as a snack, starter or even a breakfast. Chances are this appetizer will become your favorite and will definitely please a crowd if you decide to throw a party!
-TIME REQUIRMENT-
It will take 15-20 minutes to make 25-30 pieces.
-INGREDIENTS-
1 large baguette, sliced ¾ “ thick on the bias
2 mid size fresh tomato, sliced
454 g (1 lbs.) Fresh mozzarella, sliced
16 Large and fresh basil leaves
4-6 tbsp (40 – 60 ml) extra virgin olive oil
1 large clove of garlic
4-6 tbsp (40 – 60 ml) balsamic vinegar
-ASSEMBLY GUIDE-
Start by washing basil leaves and letting them drain. Wash your tomatoes as well, then slice your baguette into pieces about ¾ of an inch thick. Finely grate or mince fresh garlic cloves and combine them with some olive oil. Mix it and set aside. Pour balsamic vinegar in a squeeze bottle for easier assembly later on.
Preheat the oven to 400°F (205°C). Line the baking sheet with parchment paper and lay the baguette slices on the parchment paper. Then, generously soak them with the olive oil-garlic mixture using a spoon. Toast the soaked breads in your preheated oven for 6 minutes (or until breads look slightly golden brown on the edges).
While your breads are toasting, slice mozzarella and tomatoes.
Once ready, remove toasts from the oven and start assembling your bruschetta - lay a slice of mozzarella first, then a tomato slice. Drizzle about a teaspoon of balsamic vinegar on the tomato. To finish it off, garnish with a whole basil leaf.
