Fresh tomato bruschetta with balsamic glaze recipe. A bright and healthy bite!
Fresh tomato and basil topping
6 Roma Tomatoes (680g)
20 fresh basil leaves (5g)
3 garlic cloves
½ shallot
2 tbsp extra virgin olive oil
1 tbsp balsamic vinegar
¼ tsp salt
⅛ tsp black pepper
1 baguette
optional shredded parmesan cheese
Balsamic Glaze Recipe
1 cup balsamic vinegar
¼ cup honey (or brown sugar)

Bruschetta with Tomatoes and Fresh Mozzarella
Hi guys. Today's video, Bruschetta. It's super popular here at home. I want to invite your sons and daughters, husbands and wives to get this recipe for a nice spring brunch, or lunch outdoors. Or you can prepare and shared with your family that lives overseas???? via video call. Anyways, if you can be with your loved ones now or if you have to keep them on a safe distance, look to the bright side of the day and have fun making Bruschetta and enjoying it together. Have fun and get creative as well. Surprise yourself and your family.

Bruschetta with Mozzarella, Tomatoes and Basil
Ingredients:
4 ripe chopped tomatoes (beefsteak, roma, vine)
4 Tablespoon extra-virgin olive oil
2 Tablespoon chopped fresh basil
½ cup chopped Kalamata olives
Salt and black pepper to taste
1 sliced ciabatta bread (or any rustic bread)
Olive oil for brushing
1-2 garlic cloves for rubbing
8 thin fresh mozzarella slices
Balsamic glaze (optional)
Procedure:
1. In a bowl, combine the tomatoes, olives, basil, salt, pepper and balsamic vinegar. Toss well and set aside for at least 15 minutes.
2. Meanwhile, preheat the oven to 450 degrees F. Place the bread slices on a baking tray, brush some olive oil on top and toast, turning once, until crisp on both sides.
3. Remove bread from the oven and let it cool down a little. Rub some fresh garlic on the oiled side of the slice.
4. Arrange the bread slices on a platter or individual plates. Top each slice with 1 or 2 slices of the cheese. With a slotted spoon or a fork, lift the tomato mixture from the bowl, letting the excess juices drain back into the bowl. Place the mixture on top of the cheese, garnish with more fresh basil and serve at once.
5. Optional: drizzle some balsamic glaze on top.

How to Make BRUSCHETTA Like an Italian
Italian bruschetta is an absolute classic. It’s a common staple on Italian restaurant menus all over the world and for many Italians reminds them of “cucina povera” (or peasant food); dating back to a time where nothing was wasted, day old bread would be smothered with freshly pressed oil and vegetables from the farm. My favourite part about this dish is the sensational flavour you get from the tomato juice when using freshly grown or organic varieties. In Italian households, many foods are topped on oven-baked bread slices and served as an antipasto…simple to prepare but rich in taste, my tomato bruschetta should be on repeat in your kitchens!
