Mozzarella Cheese Sandwich With Roasted Red Pepper
This mozzarella cheese sandwich is my all time family favorite sandwich. The sandwich is perfect for lunch or Sunday brunch. Its crunchy and cheesy grilled cheese that appeals to both kids and adults

Better at Home: Tomato Mozzarella & Pesto Panini Starbucks Copycat
Ahem. Starbucks, you better watch your backs, okay?
Because Jenny and Anna are making your menu, BETTER AT HOME.
This is so good, we couldn't stop eating it. It was borderline embarrassing.
Here's what you need:
Tools:
Panini Press, Jenny used this one -
Ingredients:
Ciabatta Bread
Spinach, two handfuls
Tomato, sliced
Mozzarella, sliced
Pesto, for lathering
Salt & Pepper to taste
Olive oil, drizzles
Chicken, shredded (optional)
Directions:
Split the ciabatta through the middle to make a top and bottom for your panini. Heat your panini press to about 400 degrees. Drizzle with olive oil, and lay ciabatta bread face down. Spread generously pesto, then top with a good handful of spinach. Top with 2-3 slices of tomato, season with salt and pepper. Top with 2-3 slices of mozzarella, season again. Place chicken on top, if using. Lather the top layer of the ciabatta with a generous lathering of pesto, then place on top of the panini. Drizzle a little olive oil, and some fresh cracked pepper. Gently lay the press down, careful to make sure it presses down instead of across.
Continue to press down until the top and bottom layer of the panini are nicely browned and mozzarella is soft. It is unlikely you'll mozzarella will fully melt before the bread burns, so put it on a plate and microwave for 40 seconds.
Wrap it in a cute little sack if you're feelin' real frisky! and have a freakishly delicious panini that's better than Starbucks and better at home!
