Chocolate Kahlua Cake
Trying this cake by scratch for the first time. I created this recipe. I figured since the box version has a box of chocolate pudding and that has cornstarch then I need to add some cornstarch to the recipe. This recipe came out great! The cake has a great flavor and is super moist!
2 cups all-purpose flour minus 4 tablespoons
4 tablespoons cornstarch
1 cup granulated sugar
1 cup dark brown sugar
¾ cup unsweetened cocoa powder, Dutch-process, sifted (2-1/4 oz, 64g)
1½ tsp baking soda
1½ tsp baking powder
½ tsp salt
2 large eggs
1 cup sour cream, (4 oz, 113g)
1 cup canola oil
1/2 cup Kahlua
2 tsp pure vanilla extract
Simple syrup
1/4 granulated sugar
1/4 cup water
Heat over med heat till dissolved allowed cool before brushing on cakes
Cream cheese frosting
8 ounces cream cheese
1/2 stick butter
1/2 stick butter crisco
2 cups powdered sugar
1/4 cup dutch processed cocoa
Pinch salt
Tablespoon of milk if the frosting is too thick just use judgement on how much to add
Bake at 350 degrees
Sift flour and cocoa powder add baking soda, baking powder and salt. Next add eggs, sour cream and oil and mix for a couple minutes to incorporate all ingredients. Mix in vanilla and kahlua and pour into 2-8 inch pans sprayed with Pam or for easier removal use parchment paper in your pans. Bake 30-45 min when toothpick comes out with some moist crumbs and allow to cool in pan for 10-15 then remove to rack to cool 15 more min
Cream Cheese frosting
Mix all ingredients together on high speed until fluffy
???? DIY Coffee Liqueur - like Kahlua, but better
When we started this process of figuring out how to make Kahlua coffee liqueur at home, we found most of the recipes were too sweet, and lacked complexity of flavour. They all had only one note - and it was weak coffee flavoured vodka. It just didn't work for us.
So we started our DIY Coffee Liqueur with fresh dark roasted coffee beans that we gently smashed in a mortar and pestle. We then added ½ a vanilla bean, and bathed this in 151º over proof rum. You really want to layer flavour over flavour, and the higher alcohol helps dissolve more of the oils in the coffee - it also keeps the final product from being to cloyingly sweet when you dilute it later with simple syrup. Rounding out the complex flavour profile is a cinnamon stick, some orange peel, and crushed cocoa nibs. The Dude would be proud!
Our full cocktail playlist:
Ingredients:
2 cups (500 mL) 151º overproof rum (75.5% alc)
1 cup (250 mL) dark roast ground coffee (we just smash in a mortar and pestle)
1/2 vanilla bean
½ cinnamon stick
2- 3 cocoa nibs, optional
1 slice of orange peel, optional
simple syrup
This goes great in our Black Russian Cocktail:
This goes great in our Coffee Chocolate Brown Butter Brownies:
Method:
Slice the vanilla bean it open lengthwise and then scrape out the inside of the bean.
Place the bean, scrapings, course ground coffee and rum to a sealable Mason jar.
Give it a shake and set it aside someplace dark.
After 24 open the jar and toss in the cinnamon stick, cracked cocoa nibs, and orange peel.
Give it a shake and set aside for another day.
Strain the mixture through a coffee filter, and mix in the simple syrup… Now this is another place where your personal taste will come into play.
We like ours on the less sweet side so we start by mixing 1 part simple syrup to 3 parts coffee infusion; then we taste and start adjusting from there.
Ideally you want to end up with about 40% alc by volume.

Black Russian Brownies
Season 1, Episode 19. Like the cocktail bearing its name, these Black Russian Brownies contain both vodka and Kahlua. Please eat responsibly.
Black Russian Brownies
1 cup butter
4 ozs. unsweetened chocolate bar
¾ teaspoon black pepper, ground
1½ cups white sugar
4 eggs, slightly beaten
1½ teaspoons vanilla
2 tablespoons vodka
⅓ cup Kahlua
1⅓ cups flour
½ teaspoon baking soda
¼ teaspoon salt
1 cup chopped walnuts, optional
Melt the butter, pepper and chocolate in the top of a double boiler. Set aside and allow this to come to room temperature. Prepare a 9 x 13-inch cake pan by spraying it with cooking spray and lining it with parchment paper, then lightly spraying the parchment paper.
Preheat the oven to 350°F, 180°C, gas mark 4. In a separate bowl, whisk the sugar, eggs and vanilla until the sugar is dissolved. Add the cooled chocolate mixture into the egg mixture and whisk until it’s combined. Mix the salt and baking powder into the flour. Add the flour all at once and mix until the batter is just combined. Add the nuts, if you choose, and stir to combine. Pour the batter into the prepared pan, and smooth the surface. Bake on the middle rack with the convection oven on for 25 minutes. Do not overbake the brownies.
Allow the brownies to cool in the pan for about 30 minutes before lifting them out with the parchment paper to a cutting board. Fold down the parchment paper and slice the brownies into the desired shapes. Dust with powdered sugar and enjoy.
