How To make Terrific Tamale Pie
6 sl Bacon
1 lb Ground beef
1 c Whole kernel corn, fresh OR
-frozen OR canned 1/4 c Chopped green chile
3 Green onions, chopped
1/4 c Cornmeal
1/4 ts Oregano
1 ts Ground pure hot red chile
1 ts Salt
Freshly ground black pepper 1/4 ts Ground comino
8 oz Tomato sauce
Cornmeal Piecrust (recipe -follows) 1 Egg
1/4 c Evaporated milk
1/2 ts Dry mustard
2 c Grated Monterey Jack cheese
4 Stuffed olives, sliced
1. Fry bacon until crisp; break into large pieces. Set side. Chill bacon
drippings until firm for use in the crust. 2. Brown ground beef in a large skillet; drain off fat. Stir in next 10
ingredients. Reserve egg, evaporated milk, etc. for the top crust. 3. Prepare the piecrust, and use it to line a 9-inch pie pan. Place meat
mixture in the pan. Bake at 425 degrees F for 25 minutes. 4. Meanwhile, combine egg, evaporated milk, mustard and cheese. Spread on
top of the pie and decorate with the reserved bacon pieces and the sliced olives. Bake for 5 minutes longer, or until cheese meltes. Let stand for 10 minutes, or until firm, before serving.
CORNMEAL PIECRUST (1 crust for 9-inch pie): 1 cup all purpose flour 2 Tbsp cornmeal 1/3 cup firm bacon rippings OR other shortening 3 4 Tbsp cold water 1. Combine flour and cornmeal, then cut in bacon drippings. When mixture
is granular, add the water, in small quantities to insure a flaky crust, until pastry is mixed. 2. Roll out on a floured surface to a circle 1 1/2 times larger than the

I found this recipe online. AND, I WILL alter it next time. I would use Jiffy cornbread mix (a little sweetness to offset all of the other flavors) in a smaller dish. I will layer this dish by placing the cornmeal mixture in the bottom, meat in middle and cornmeal at the top.

1930's Canadian Tamale Pie Recipe. Welcome Friends! Today on the Old Cookbook Show, we are going to make a 1930's Depression era Canadian version of a Tamale Pie Recipe. Tamale Pie probably wasn't something that a lot of Canadians were eating in the 1930's - so this Tamale Pie Recipe was a bit of an exotic anomaly in this cookbook.
Ingredients:
1½ cups cornmeal
1½ tsp salt
2 cups cold water
4 cups boiling water
1 ounce suet
1 onion, chopped
1 pound ground beef or pork
1 cup canned tomatoes
Salt and pepper to taste
Cayenne pepper to taste
Method:
Preheat oven to 350ºF
Mix cornmeal, salt, and cold water; add boiling water.
Stir well and cook in a double boiler for 1 hour.
Render suet, and cook onion until it browns.
Then add meat and brown it, add tomatoes and cook 5 minutes.
Add salt, pepper and cayenne to taste.
In a greased casserole, add an inch layer of cornmeal.
Add the meat in a layer, and then a final layer of cornmeal.
Cover and bake for 45 minutes.
Remove cover and brown.

Tex Mex Tamale Pie with Jiffy ~ Easy One Pot Tamale Pie Recipe
INGREDIENTS:
1 TO 1 1/2 pounds ground beef
1/4 cup salsa
1 small can red enchilada sauce
1 cup finely diced onion
1 cup finely diced bell pepper
1 small can green chilies
1/8 tsp. black pepper
3-4 cloves minced garlic
1 tsp. oregano
1 tsp. chili powder
1 tsp. smoked paprika
1 tsp. cumin
1 cup corn
1 cup grated cheese - cheddar or mix
chopped green onions
Topping:
1 box cornmuffin mix
1 egg
1/3 cup milk
1/4 cup corn
small seeded finely diced jalapeno
1/4 cup grated cheddar cheese
*Mix above ingredients. Do not over mix
Preheat oven to 400 degrees Farenheit
In a pan on medium heat add ground beef and spread out.
While beef is still pink add salsa and enchilada sauce.
Cook, chop and stir until beef is broken up. Bring up to a simmer.
Add diced onions, bell peppers and green chilies. Stir to combine.
Add seasonings. Stir and cook for 5-10 minutes or until the liquid
reduces.
Add corn and stir to combine. Remove from heat.
Add a little grated cheese on top of beef mixture.
Add corn muffin mix by spoonfuls on top of mixture and spread out
as best as you can.
Bake at 400 degrees farenheit for 25 to 30 minutes.
Remove from oven and top with more grated cheese and chopped onions.
Let cool for 10-15 minutes before serving.
Enjoy.

Tamale Pie
Ingredients
1 pound lean ground beef
1 onion chopped
1 can diced green chilis
1 can rotel tomatoes
2 cloves garlic minced
2 tablespoons taco seasoning
¼ cup water
¾ cup enchilada sauce
2 cups cheddar cheese shredded, divided
Topping
1 box corn muffin mix 8.5 oz
½ cup sour cream
½ cup corn kernels canned, fresh, or frozen
⅓ cup milk
1 egg
green onions and tomatoes diced for garnish
Instructions
Preheat oven to 350ºF.
Combine beef, onion, green chilies, rotel tomatoes , and garlic in a cast iron skillet.
Cook until no pink remains. Drain any fat.
Add taco seasoning and ¼ cup water.
Simmer until water evaporates.
Stir in enchilada sauce.
Put meat mixture in a 9 X 13 dish
Top with ½ cup of cheese.
Combine corn muffin mix, sour cream, corn, milk ,and egg.
Spread over the beef mixture.
Top with remaining cheese and bake 30-40 minutes.
Garnish with green onions and tomatoes and serve.
