1 lb Diced beef
Olive oil 1 Eggplant, peeled and diced
3 c Light tomato sauce
1/2 sm Onion,diced
1/4 ts Basil
1/4 ts Oregano
Salt and pepper to taste Fry beef and eggplant in oil in skillet (or eggplant may be deep- fried).Prepare light tomato sauce.Combine with remaining ingredients. bake,uncovered,on low heat about 45 minutes,as for stew,to allow sauce to blend through meat and eggplant.Serves 4 to 5.

Tas Kabab - a traditional one pot meal!
When my mom was in town I had her teach me a wonderful variety of her favourite childhood favourites. This is a hearty one pot meal made with potatoes, eggplant, tomatoes, quince, carrots and lamb. You simply put all the ingredients in a pot and let it do it’s thing while it is cooking away on low heat.

Ingredients:
1 kg meat ( lamb , beef or chicken)
3 large onion ( slice)
3 large potato wedges
3 medium carrots slice
1 large quince wedges
1 large eggplant cubes
2 tomatoes
1 cup plums
1/3 cup tomato paste
1/4 cup oil
2 tsp turmeric
5 cloves garlic
Salt
pepper
2 Tbsp lemon juice
2 cups of water

In Turkey, we have many kebab recipes besides sis kebab. Tas Kebab is one of them. It has meat chunks, can be from a lamb of beef and potato cubes. A traditional dish in Turkish restaurants and homes. It is usually served with rice pilav but bulgur pilav also can be used. This time I made my bulgur pilav with lots of veggies and meat stock to make it more flavorful and nutritious.
Ingredients for Tas Kebab:
500 grams beef or lamb, cut in cubes
1 onion
2 tbsp olive oil
2-3 sweet green peppers
3 medium-size potatoes
1 tbsp tomato paste
1-2 tomatoes preferable when in season
salt, pepper
hot water or meat stock from precooked meat we are going to make
Ingredients For Vegetable Bulgur Pilav:
2 tbsp olive oil
1 eggplant
1 carrot
1-2 medium onions
4-5 tbsp olive oil
2-3 green peppers
1 sweet red pepper
2-3 close of garlic
3 medium-size ripen tomatoes
salt, black pepper, sweet red pepper
2 cups coarse bulgur wheat
1 cup meat stock (if you have)
2+1/2 cups or more water (if you don't add meat stock add more water of course)

Traditional Turkish Lamb Tas Kebab Recipe
Turkish traditional lamb tas kebab recipe
lamb kebab will be made in this video, this meal will be 40 people

The lamb should not be newly slaughtered, so use at least 2 days rested meat

remove the lamb arm from the bone

Total 6 kilograms of meat will be enough for 40 people
So you need to calculate at least 150 grams of meat for 1 person

add a few bay leaves into the boiling water
Add 1 spoon of dried oregano
Add the chopped meat and mix

Remove the meat into the strainer after 10 minutes without water

Remove from oven after 10 minutes and serve
