After the last few recipes, you already know by now that we love the sweet and tangy food combination :). These Lemon Curd Filled Sandwich Cookies are so lovable and almost addictive that once you start eating them you can't stop! Buttery, sweet, and tangy. You can make them with homemade or store-bought lemon curd.
How to make Lemon Curd at Home
No-Bake Lemon Cheesecake Bars
Recipe for about 15 cookies
Ingredients
7 oz (200 g) of unsalted butter (softened)
2 and 1/4 cup (270 g) of All-purpose Flour
3/4 cup and 1 tablespoon (100 g) Powdered Sugar
1 teaspoon of Vanilla extract
Zest of 1 lemon
Filling (about 15 Teaspoons) of Homemade or store-bought lemon curd.
Directions:
Before you start make sure you have softened butter.
1. Line two baking sheets with parchment paper or silicone baking mats and set them aside.
2. In a separate medium bowl, whisk together the softened butter, powdered sugar, lemon zest, and vanilla extract until they are light and fluffy. Add the flour and mix the ingredients with a spatula.
3. Work the cookie dough with your hands until completely combined.
4. Divide dough in half and in half again and pat each half into a disc, it's easier to work with little portions when you are rolling and shaping cookies. Use plastic wrap for the portion that you keep in the fridge.
5. Roll out the cookie dough about 1/4-inch thick (6mm) Using a 3 inch ((7.5 cm) round cookie cutter, cut out cookies. Transfer rounds to a parchment-lined baking sheet. Gather the scrap dough, roll, and repeat until you have 15 pieces. Place the cut-out cookies onto a lined baking sheet about 1 and 1/2 inches apart.
6. Preheat the oven to 350°F (175°C) and put the cookies in the fridge to chill for 30 minutes.
7. While the first half of the cookies are chilling, cut 15 rounds from the remaining dough. Once you've transferred the cookies to a baking sheet, use your smallest cookie cutter (1 inch - 2.5 cm) to make a cut out in the center of each one of them. Chill for 15 minutes,
8. Bake in the preheated oven for about 10 minutes, depends on your oven. Make sure not to overbake the cookies.
9. Remove from the oven and cool on the baking sheet for about 10 minutes, then carefully transfer the cookies to a wire rack to cool completely.
10. Fill each cookie with 1 teaspoon of lemon curd jam and place the second cookie on top. Repeat until you have about 15 cookies.
Dust with powdered sugar. Enjoy!

Our Top-5 Strains for a Great Weed High
To those who have never smoked cannabis, there is a (mistaken) belief that there is only one high,
and it is because of that single high that people smoke cannabis.
Who wants to tell them just how wrong they are?
How do you explain why they are wrong?
Maybe we should tell them about THC and how varying levels of THC can affect the way our brain
reacts, leaving us feeling either energized, euphoric, uplifted, relaxed, or sleepy.
More to the point, THC is ‘counterbalanced by CBD, which has a more calming and sedative effect.
That is why in many instances marijuana or cannabis is illegal, but CBD, one of its constituents isn’t.
In simple terms, CBD is not a ‘psychoactive’.
Finally, there are hundreds of chemicals in marijuana, and it is the combination of some of these with THC and CBD that can ultimately create different highs, not to mention terpene levels and our own physiology.
So, perhaps we should now look at the varying strains of cannabis that are specifically associated
with a specific high.
Let’s start with Energized.
Think Green Crack. This is a legendary sativa strain dating back to the 1970s and, for obvious reasons, is well suited to daytime enjoyment.
Green Crack is also abundant in myrcene, pinene and caryophyllene terpenes, though knowing that
may leave you feeling none the wiser!
Other strains worth considering for an energy boost are Jack Herer and Durban Poison.
How about uplifted?
Sour Diesel probably takes the crown for this effect, the plant being a potent sativa-dominant hybrid.
Most prominent terpenes include myrcene, limonene and caryophyllene.
If you fancy something less well known for its uplifting effects, check out Super Silver Haze or Tangie.
Now the euphoric high takes a lot of beating, and hence the popularity of OG Kush.
Not only is the high euphoric, it is also long lasting, but it also comes with a codicil.
Where most highs leave you ultimately feeling sleepy or energized, Hindu Kush will just leave you
feeling stoned!
If you want the same high, but without the strength of OG Kush, why not try GSC or Wedding Cake
instead?
If you’ve had a stressful day, then maybe a nice relaxed high is what you need.
Look no further than Blue Dream, which will also add a hint of euphoria to the mix, thanks to this
hybrid cross of Blueberry and Haze.
Dominant in myrcene, pinene, and caryophyllene terpenes, users of Blue Dream are usually easy to
spot when high, they have a great big smile on their face!
Similar effects can be achieved with Apple Fritter and Purple Punch.
