How To make Tagine Of Chick Peas with Aromatics
4 c Chick peas, soaked
Salt 1 ea Spanish onion, grated
3 lg Tomatoes, skinned, seeded &
diced 6 ea Sprigs Italian parsley,
:
chopped 4 ea Sprigs cilantro, chopped
1/4 ts Hot red pepper
1/4 ts Sweet red pepper
1/4 ts Cinnamon
1/4 ts Saffron
1/4 ts Cumin
1/4 ts Ginger
Black pepper 6 tb Olive oil
Drain chick peas & cook in boiling salted water until tender. Drain. Peel chick peas & combine with onion in a tagine (or shallow casserole). Add tomatoes, herbs, spices, salt & pepper. Mix well. When ready to cook, add olive oil & simmer over a low heat for 15 minutes or until the chick peas are well impregnated with the aromatoc flavours.

Hi guys, welcome to Marks Irish Kitchen, where i do recipes that the whole family can enjoy. Todays video is for a healthy vegetarian tagine. It has flavours of North Africa, with steamed vegetables, crunchy harissa flavoured Chickpeas and topped with a herb infused yogurt. This dish goes well for dinner parties, is easy to make and freezes really well, if you wanted to make it in advance. Ingredients
Olive oil spray
1 large red onion
2 cloves garlic crushed
4 baby aubergine(egg plant) quartered
1lb butternut squash (or pumpkin) cut into chunks
2 tsp ground cumin
2 tsp ground coriander(cilantro)
2 tsp ground ginger
1/2 tsp ground cinnamon
400g tin crushed tomatoes
2 cups vegetable stock
2 cups water
300g green beans trimmed
YOGURT DIP
3/4 cup Greek style yogurt
1/2 cup parsley finely chopped
1/2 cup fresh mint finely chopped
1 tablespoon harissa paste(optional)
FOR THE CHICKPEAS
400g can chickpeas drained, rinsed and skins taken off
1 tablespoon harissa paste
1 tablespoon olive oil.
METHOD
Make harissa chickpeas
Pat chickpeas dry with a towel and remove the outer skins, place in a med bowl. Add the oilve oil and harissa paste, stir to combine. Put them on a greased tray and add to the airfryer for 17mins at 200c(400f). For a conventional oven, preheat the oven to 200c and cook in the middle for 20 minutes, stirring 3 times, until well browned and crispy.
Tagine
Heat oil in a large saucepan over a medium heat, cook the onion and garlic, stirring for about 5 minutes. Add aubergine and squash, cook for 1 minute or until the vegetables are lightly browned. Add spices and cook for 1 minute to release the fragrances. Add tomatoes, stock and water, bring to the boil. Reduce the heat and simmer for 10 minutes until the vegetables are just tender, then add the green beans and cook for a further 5 minutes.
Serve tagine topped with the yogurt mixture, chickpeas and herbs. Season with pepper.

A Slow Cooker Lamb Tagine with Fresh Apricots and Chickpeas
This is a wonderful slow cooker Lamb Tagine Recipe, we have used dried chickpeas that cook within the tagine and help to create a sauce and more importantly the apricots (that were peeled and cut into quarters) dissappear and help create the sauce at the end.
We have added cayenne pepper to this recipe, to add a little bit of spice, but this can be left out if you prefer a less spicy dish.
Slow Cooker Featured:

Cooking Time: 6 Hours
Setting: LOW
600g Diced Stewing Lamb
300g Chickpeas (dried)
2 Onions
300g Fresh Apricots
Bunch of Parsley
Bunch of Coriander
1 Chicken Stock Pot
1 Teaspoon of Ginger Puree
1 Teaspoon of Garlic Puree
1 Can of Chopped Tomatoes
2 Tablespoons of Paprika
2 Tablespoons of Cumin
1 Tablespoons of Ground Cinnamon
1 Teaspoon of Cayenne Pepper (optional)
