How To make Sweet Potato Surprise Cake
CAKE:
1 1/2 c Cooking oil
4 ea Eggs, separated
3 ts Baking powder
1 t Cinnamon
1 1/2 c Raw sweet potatoes, grated
2 c Sugar
2 1/2 c Sifted cake flour
1/4 ts Salt
1 t Nutmeg
1 c Chopped nuts/walnuts/pecans
1 t Vanilla extract or flavor
FROSTING:
1 lg Can evaporated milk
3 ea Egg yolks
1 1/3 c Flaked coconut
1 c Sugar
1 Stick oleo
1 t Vanilla
Combine cooking oil and sugar. Beat until smooth. Add egg yolks and beat well. Add dry ingredients which have been sifted together. Stir in potatoes, nuts and vanilla, beat well. Beat egg whites until stiff. Fold into mixture. Bake in 3 greased and floured 8-inch layer pans at 350 F. for 25-30 min. Cool and frost. FROSTING: Combine milk, sugar, oleo, egg yolks and vanilla in sauce pan. Heat until boiling. Add coconut and continue to cook 3 to 5 min. or until mixture thickens. Remove from fire, and place saucepan in container of ice and beat with wooden spoon until spreading consistency.

Cook the potatoes ahead of time to speed up the process ????
Oven temp -350f roast the potatoes for 1-2 hours
Then bake casserole for 25 minutes
Then another 5-8 minutes after adding the marshmallows
Ingredients:
3 lbs orange sweet potatoes
4-5 tbsp brown sugar
1/2 tsp salt
1 tsp ground cinnamon
1 tsp vanilla
1/4 cup heavy cream
1/4 cup melted unsalted butter
2 eggs
For the pecan streusel topping
1/4 cup brown sugar
1/4 cup APF
1/4 cup old fashioned oats
1/2 cup chopped pecans
1/2 tsp ground cinnamon
1/4 cup melted butter
Mini Marshmallows to top it off!!!!

2-15oz cans of yams
Add liquid from one can
1 tsp Cinnamon
1/4 tsp Nutmeg
1tsp Vanilla
1/2 cup brown sugar
Mix separately:
1/2 cup self rising flour
1/2 cup sugar
1/2 cup milk
dash of salt
Pour on top of sweet potatoes
Bake
30 min on 350

3 cups all purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon ginger
1 cup butter room temperature
2 cups Sugar
6 eggs room temperature
1 teaspoon vanilla extract
1 teaspoon butter extract
1 cup of cooked sweet potatoes ( cook 2 sweet potatoes that’s about a cup!
1 cup buttermilk room temperature
Mix dry ingredients set aside then mix butter, sweet potatoes, sugar then eggs and extract and buttermilk then add your dry ingredients bake in preheated oven on 325 for 1 hour and 10 minutes Enjoy

Hey Guys,
I fall in love with this cake since first time I had it at MUJI café
“Sweet Purple Potato and Chestnut Roll”.
A cotton soft vanilla sponge cake, loaded with Chestnuts cream and earthy purple sweet potatoes.
And since Christmas is coming soon, I developed the cotton sponge cake with spinach powder that I really love.
The earthy flavour of the spinach bring freshness and goes very well with the sweetness from the sweet potatoes. And yes, the vibrant purple and green colour is more lovely too.

Total Time: 2½ hours
✨PURPLE SWEET POTATO PASTE
250 g Purple Sweet Potatoes
100 g Heavy Cream
✨SPINACH SPONGE CAKE
55 g Egg Yolks
15 g Caster Sugar
45 g Milk (warm)
30 g Vegetable Oil
1/2 tsp Vanilla Extract
1/2 tbsp Spinach Powder
2 tsp Hot Water
45 g All-Purpose Flour
10 g Corn Starch
90 g Egg Whites
1/4 tsp Cream of Tartar
45 g Caster Sugar
✨CHESTNUT CREAM
1/2 tsp Unflavoured Gelatine Powder
3/4 tbsp Cold Water
175 g Heavy Cream (cold)
30 g Icing Sugar
1/2 tsp Vanilla Extract
50 g Chestnut (chopped)
BAKING TEMPERATURE & TIME
150°C - 25 to 30 Minutes
NOTES
The cake should be stored in the fridge (in an airtight container).
Best served on the day it's made; it can be store in the fridge for 3-4 days.
