Ingredients :
Cookie Dough
• 2cups - 240g Flour
• 1cup - 225g Butter
• 1/4tsp - 1,5g Salt
• 3/4cup - 90g Powdered Sugar
• 1tsp - 2.5g Cardamom
• 1tsp - 2g Lemon Zest
• 3/4cup- 90g Pistachios
Topping
• 1cup - 200g Sugar
Instructions
•Making the dough
1. Preheat your oven to 350°F (175°C) and spread shelled pistachios in a single layer on a baking sheet.
2. Roast pistachios for 10-12 mins until golden brown & fragrant.
3. Use a hand mixer to combine flour, butter, salt, powdered sugar, cardamom, and lemon zest in a bowl.
4. If the mixture is too dry to come together, use your hands to knead it into a dough.
5 .Add chopped pistachios and mix them in by hand.
•Shaping the dough
1. Roll the dough into a cylinder that is about 5cm in diameter.
2. Sprinkle some sugar on your workspace and roll the cylinder in the sugar until it's fully coated.
3. Refrigerate the cylinder for 45 minutes until it is firm.
•Cutting and baking the cookies
1. Preheat your oven to 325F (160C).
2. Slice the cylinder into 5mm thick slices.
3. Place the slices on a baking sheet.
4. Bake for about 20 minutes, or until the cookies are golden brown.
5. Once done, let them —-cool down and then enjoy your delicious cardamom pistachio cookies!

1/4 cup honey, divided
⅓ Cup unsalted butter, room temperature, Cubed
3 large eggs, room temperature
4 cups (568g) all-purpose flour
2 teaspoons salt
Filling
unsalted butter z 75g
dark chocolate 100g
icing sugar 2 tbsp
cocoa powder 2 tbsp
sea salt flakes 1/4 tsp
1 Tbsp Orange Zest
Pistachios 75g, chop into small pieces, plus extra for decoration
Glaze
1 ¾ cups icing sugar
1/4 cup orange juice
1 tbsp orange zest
1 Tbsp butter, melted

Sweet Crispy French Pastry with White Chocolate and Pistachio
• Materials:
• 2 tablespoons of butter (50 grams),
• 1 teaspoon of salt,
• 1 glass of flour (130 grams),
• 1 package of white chocolate (70 grams),
• 1 pack of pistachios (50 grams),
• Half tea glass of water,
• 1 tablespoon of granulated sugar,
• 2 tablespoons of mozzarella cheese,
•
• Making:
• A piece of 15 grams of butter.
• 1 teaspoon of salt.
• 1 glass of flour (130 grams).
• Add half tea glass of water, little by little.
• Knead the dough well and let it rest for 20 minutes.
• Roll out the dough by 60 cm with a rolling pin.
• Make a square by cutting the 4 sides of the dough.
• Melt the remaining 35 grams of butter.
• Sprinkle the melted butter on the dough.
• 1 tablespoon of granulated sugar.
• 2 tablespoons of mozzarella cheese.
• Chopped white chocolate (70 grams), pistachios (50 grams).
• Lay the pieces of phyllo cut from the edges on it.
• Apply some more butter and fold the edges inwards.
• Cook the phyllo in an oiled pan.
• Spread butter on it and turn it upside down when golden brown.
• When it is cooked on the other side, transfer it to a serving plate.
• You can eat it hot by slicing without waiting. Enjoy your meal.
