Ingredients
* 1 1/3 cup (120g) almond flour (‼️NOT PACKED‼️)
* 2 tablespoons (30 ml) maple syrup
* 2 tablespoons (30 ml) coconut oil, melted
* Pinch of salt
NOTE:
1. Please, use the Digital kitchen scale fo the best results!
2. Instead of maple syrup take 2 tbsp sugar/low-carb sugar and 1 tbsp water.
3. Instead of coconut oil take Ghee or yellow part of melted butter. Vegetable oil don't work in this recipe.
4. Don't let the dough chill too long. Coconut oil will solid at room temperature and the dough will be crumbly and will not come together.
5. Don't pack down almond flour!
Instructions
1. Preheat oven to 350F (175C). Line a baking sheet with parchment paper.
2. In a medium bowl, combine all of the ingredients, stirring to combine (be sure to break up any lumps in the flour and/or sugar).
3. Shape dough into about 16 balls. Space balls 2 inches apart on prepared baking sheet. Flatten halfway (e.g., with a fork, cookie stamp, the flat bottom of a measuring cup, or fingertips)
4. Bake in a preheated 350F oven for 12 to 15 minutes until the edges are golden brown and the centers no longer look wet. The cookies will still seem somewhat soft, but that is due to the high amount of fat (almond flour + coconut oil). They will become firm once completely cooled.
5. Remove from oven and cool on sheet for 10 minutes. Transfer to a wire cooling rack and cool completely.
Storage: The cookies are best stored in the refrigerator, in an airtight container, for up to 2 weeks (or the freezer for up to 6 months).

Finnish Shortbread Sticks With A Twist: Spelt Flour Cookies
Imagine a not-too-sweet melt-in-your-mouth cookie. This is Finnish Shortbread Stick Cookies called Finska Pinnar in Swedish; a popular butter cookie sold in most bakeries in Sweden. This is a classic shortbread butter cookie. Sue Maree P style I have changed the traditional recipes and created my recipe with a blend of ground almonds, white spelt flour, and little sugar. There are many recipes using only wheat flour and more sugar. I like the balance of almonds and spelt flour and not too sweet. I have made them both with unsalted and salted butter. Also if you don't have access to bitter almond essence add vanilla essence instead.

0:40 Blend all ingredients in a food processor or mix sugar and flour into the butter with your hands to form a dough

Dough
* Ground almonds – 35g, 1.2 oz (1/3 cup)
* Bitter almond essence – 3-4 drops
* Sugar – 35g, 1.2 oz (3 tbsp)
* Butter, softened – 200g, 7.1 oz (1/2 + 1/4 cup, together)
* White Spelt Flour – 250g, 8.8 oz (1 cup + 1/2 cup) maybe more for rolling
Brushing and decoration
* Egg white whisked – 1
* Chopped almonds – 1-2 tbs
* Pearl sugar or regular sugar – 1-2 tbsp

Makes about 25 cookies
Ingredients:
1 cup (230g) Butter, softened
2 cups (250g) Flour
2/3 cup (85g) Powdered sugar
Optional additions:
Vanilla extract
Salt
Sugar for coating
Directions:
1. Preheat oven to 350F (180C). Line a baking tray with parchment paper, set aside.
2. In a large bowl cream together the butter and powdered sugar until light and fluffy. Add the flour and mix until combined. If the dough is too soft, add 2-3 tablespoons of flour
3. 2 ways to shape the cookies:
A. Shape the dough into a disk form, wrap in plastic wrap and refrigerate for 1 hour. Then, roll out the dough into 1/4-inch (1/2cm) thick. Then, cut into desired shape (hearts, round, rectangle).
B. Roll the dough into a log shape, wrap it with plastic wrap and freeze for 30 minutes. Then, unwrap and slice the log into 1/4-inch (1/2cm) thick slices.
4. Transfer the cookies to the baking tray and bake for 12-15 minutes, until slightly golden.
5. Allow to cool.
Notes:
• Cookies can be stored in an airtight container up to 3 days.
• If the cookies are too soft, refrigerate for 30 minutes before baking

EASY Christmas Snowballs - Pecan Balls - So Easy, ANYONE Can Make These
INGREDIENTS:
1 cup all purpose flour
1/2 cup (4 ounces/113 grams) butter, softened - I use unsalted
1 cup finely chopped toasted pecans
3 Tablespoons granulated sugar
1 teaspoon pure vanilla extract
1 cup powdered sugar for rolling
