Maultaschen - My Historic Swabian Ravioli Version - Whole Plant Based
Swabian Maultaschen may have received their name from their shape that looks like feedbags for horses. In my home region in Swabia (an area that belongs partially to the German states of Bavaria where I come from and Baden-Wuerttemberg ), this ravioli style pasta is traditionally made and eaten on Maundy Thursday or Good Friday before Easter when Catholics should not eat meat.A historic anekdote says that this Maultaschen were created by Cistercian monks in the Abbey of Swabian Maulbrunn. As the monks were hiding meat inside the pasta so that God could not see it, the Maultaschen received the nickname Herrgottsbscheisserle which means God's little cheaters. Well, my Maultaschen are whole plant based and vegan so we have nothing to hide LOL. Here is the recipe:
Take Frieda Eggroll Wrappers and cut them lengthwise in half (you can also use Lasagna pasta or make your own pasta dough. I just love to use these wrappers, they are perfect for the recipe).
Chop and water sautee in a little bit vegetable boullion 1 onion, 3 cloves of garlic, 1 cup of mushrooms. Add 1 packet drained thawed chopped spinach. Add 1/4 tsp salt, 1/4 tsp nutmeg, 1/4 tsp red chili peppers, 1/4 tsp fresh ground black pepper, 2 tbsp parsley, 1/2 tbsp dried Basile, 2 tbsp tamari or soy sauce and at the end add 1 cup of well chopped walnuts. Sauttee until nuts are soft but not soggy. Mix 2 tbsp flour with 4tbsp water in a cup. With your finger, spread the flour-water mixture on the edges of your dough piece. Then fill the dough with about 1 to 2 tbsp spinach mixture placed on the upper half and fold over the lower half. With a fork, press the edges firmly together. Proceed until all filling is worked into the Maultaschen. Then carefully slide them into boiling salt water (or vegetable soup) and let them simmer for about 3 minutes until they swim on top. Now you can either eat them with vegetables in your soup or you take them out with and let them dry a little bit on a plate. Then you can braise the maultaschen in a non-stick skillet with some onion rings and serve them with a side of vegetables. Bon Appetit!

MAULTASCHEN - paso a paso de como hacer ravioles abiertos con caldo
Receta fácil de como preparar Maultaschen, una especie de pasta rellena que se come como sopa o dorados con mantequilla (geschmälzt) junto con cebolla caramelizada y kartoffelsalat (ensalada de patatas). Es una pasta tradicional alemana que está rellena de carne picada, varias especias y verduras como cebolla, espinacas, etc. Se consumen dentro de un caldo o sopa a tu elección y son muy fáciles de hacer, simplemente déjalos reposar a fuego muy bajito dentro del caldo ¡y listos para disfrutar!
Y si te sobran algunas, las puedes congelar y después cortar en rebanadas y preparar con un poco de mantequilla en la sartén junto con cebolla, huevo y unas hojas de salvia.
Ingredientes para 4:
1 cebolla
125g de carne picada de cerdo
125g carne de bratwurst (o carne picada)
250g espinacas frescas
2 huevos
1 litro de caldo de carne
2 manojos de perejil
300g de harina
50ml de agua
1cucharada de nuez moscada
1 pan duro remojado en leche
sal, pimienta
aceite vegetal

Maultaschen are pockets formed from pasta dough and filled with cheese, onion or spinach, for example. The ingredients for the filling vary. Every German family has its own recipe. And the queen among the German Maultaschen is the Swabian. Since 2009, the Schwäbische Maultasche has even had an EU seal of approval for its designation of origin. Maultaschen are particularly popular in southwest Germany. In the north of Germany, however, Maultaschen are eaten less frequently. German Food Made Easy presenter Max Merrill only knows Maultaschen from the restaurant. The Berlin native has never made them himself. So Maultaschen is also an absolute premiere for him this episode on which Max also explains to you why Maultaschen used to be called Herrgottsbscheißerle.

This was the first time I ever had Maultaschen and they were homemade which is pretty cool. I thought they were very delicious and well worth the effort!
You need:
(dough)
300g flour
100g semolina
pinch of salt
4 eggs
2 tablespoons oil
(filling)
300g vegetables of your choice
6 slices of toast
1 egg
salt, pepper, nutmeg
optional: 2 egg whites or water
(sauce)
1 onion
1 tablespoon butter
100ml white wine
200ml vegetable stock
300g cream cheese
some lemon juice
some chives

Folgende Zutaten werden benötigt:
500g Champignon braun frisch
1 Zwiebel
90g Gourmet Pesto Pilz & Trüffel
4 Zehen schwarzer Knoblauch
80g zarte Haferflocken
15g gehackte Mandeln
200g Frischkäse Natur
2 Eier Klasse M
1½ TL Salz
½ TL frisch gemahlener schwarzer Pfeffer aus der Mühle
½ TL Paprika geräuchert
½ TL Knoblauch granuliert
¼ TL Zucker
½ TL Paprika geräuchert
½ TL Cayennepfeffer
1 EL Majoran
1 EL Estragon
1 TL Butterschmalz
1 Pack. Nudel-Fertigteig oder selber machen,
siehe unsere schwäbischen Maultaschen:
Zum Garen der Maultaschen:
2 ½ l Gemüsebrühe
Fürs Topping:
Etwas Parmesan und Majoran oder optional frisch geriebene Trüffelscheiben
Zubereitung:
Zuerst die Champignons mit einer Bürste oder Küchenkrepp trocken säubern bzw. abreiben und in kleine 5 mm-Würfel schneiden.
Die Zwiebel schälen, dann mit fermentiertem Knoblauch klein würfeln. Die Zwiebel glasig anbraten. Die Pilze hinzufügen und kurz mitbraten. Dann kommen bis auf die Eier und Haferflocken alle Zutaten dazu. Kurz erwärmen und gut vermischen bis es eine sämige Masse ist und abkühlen lassen.
Die Haferflocken in eine Schüssel geben, dann die abgekühlte Masse, zum Schluss die Eier hinzufügen und alles gut vermischen. Nach Bedarf nachwürzen.
Den Teig bereits einige Stunden vorher aus dem Kühlschrank nehmen.
Zum Verarbeiten den Teig aus der Verpackung nehmen und auf der Arbeitsfläche aufrollen.
Die langen Seiten zeigen nach unten und oben.
Den ganzen Teig großzügig mit Ei bepinseln und die Maultaschenmasse auf die unteren 2/3 des Teiges ca. 1 cm dick aufstreichen. Jetzt wird das untere Drittel umgeschlagen. Das obere Drittel wird nochmals leicht mit Ei bestrichen, auf die Rolle umgeschlagen und die Naht wird leicht angedrückt.
Die gesamte Teignudel auf die Naht drehen und mit einem Kochlöffel alle 6 cm eine Rille eindrücken. Dann mit dem Nudelschneider oder einem Messer in einzelne Stücke schneiden.
Fertig sind unsere gerollten Maultaschen. Im Video wird alles genau gezeigt.
Die Gemüsebrühe zum Kochen bringen, die Maultaschen darin im offenen Topf etwa 15 - 20 Minuten gar ziehen lassen, bis sie an die Oberfläche steigen.
Beim Anrichten mit den Maultaschen beginnen, etwas Brühe hinzufügen, mit Parmesan und Majoran oder optional frisch geriebene Trüffelscheiben garnieren.

TIPPS / Hinweise:
Champignons (französisch für „Pilz“) dürfen nicht gewaschen werden, da sie sonst das Aroma verlieren. Hoher Gehalt an Vitaminen, Proteinen und Ballaststoffen, ein geringer Fettgehalt.
Vitamine: B2, B3, B5, B7 und B9, D, E, K, sowie Kalium, Eisen und Zink.
Schwarzer Knoblauch
Er wurde fermentiert. Knoblauch wird unter Verschluss bei definierter Hitze und Luftfeuchtigkeit gegart. Zucker und Aminosäuren werden dabei in dunkle, stickstoffhaltige organische Verbindungen umgewandelt, die den Knoblauch schwarz färben. Durch die Gärung bekommt der Knoblauch eine weiche, etwas klebrige Konsistenz, der Geschmack wird süßlich und erinnert an Pflaumenkompott, Lakritz und Aceto balsamico.
Schwarzer und weißer Knoblauch wirken antibakteriell, zur Prävention oder Behandlung bei Erkältungskrankheiten, die Inhaltsstoffe senken die Blutfettwerte, signifikante Senkung der gesamten Cholesterinwerte und daher wirken sie auch vorbeugend gegen Ablagerungen in den Arterien.

Die Maultaschen können auch portionsweise eingefroren, überbacken oder geröstet mit einem Salat angerichtet werden.
