How To make Sugared Almond Sticks
1/2 c Blanched almonds
2 tb Sugar
1 c All purpose flour; sifted
1/3 c Sugar
1/4 ts Salt
1/2 c Butter or margarine
1 Egg yolk
1/4 ts Almond extract
1 Slightly beaten egg white
Recipe by: From the book Butterfingers Grind almonds in blender. Mix 2 tbs almonds with 2 tbs sugar and set aside. Combine remaining almonds, flour, 1/3 cup sugar and salt. Cut in butter until mixture resembles coarse crumbs. Add eg gyolk and almond extract; mix well. Divide dough into six portions on lightly floured surface. With floured hands, roll each portion into a rope 12" long. Brush tops generously with egg white. Sprinkle with reserved almond-sugar mixture. Cut each strip into cookies 2 inches long. Place on-inch apart on ungreased cookie
sheet. Bake at 350 for 14-15 minutes. Cool 5 minutes before removing. Makes 3 dozen sticks. JM -----

???? Keto English Toffee Candied Almonds / Almond Brittle
This recipe is very similar to my keto candied pecans recipe, but I was really shooting for something that could be used along with chocolate in a fat bomb or candy bar that would come close to tasting like a Heath bar. You can make this either as candied almonds or as an almond brittle. Either way, you're looking at just 3g net carbs per ounce (which is a pretty generous serving).
I blend a number of sweeteners in this recipe because I find they each bring a little something to the party. You don't need to do this, but I do recommend that you do a 50/50 blend of white and brown sweeteners.
In this video, three of the sweeteners I used contain Erythritol (Lakanto, Swerve and Sukrin) -- so this batch had a more noticeable cooling effect in my mouth than a previous batch where my two white sweeteners were BochaSweet and allulose. If you have it or aren't put off by the price, I highly recommend using BochaSweet instead of a white Erythritol sweetener.
Also, if you're willing to accept a few extra carbs, you could use Truvia brown in place of one of the brown sweeteners. This will add 2g net carbs per ounce of this brittle. The total yield on this brittle was approximately 20 ounces.

Dried Fruit Biscotti Recipe
Dried Fruit Biscotti are absolutely wonderful for morning hot tea or coffee. These are made with dried cranberries, plums, apricots and raisins that bring an amazing taste.

Ingredients
Makes about 25 biscotti
1 stick (110g) butter, room temperature
1/2 cup (100g) sugar
2 eggs
1 1/2 tsp (6g) baking powder
Finely grated zest of 1 lemon
1 tsp (5g) vanilla extract
1 cup mix of dried fruits (cranberries, plums, apricots and raisins)
1 1/4 cup (160g) all-purpose flour
1/2 cup (50g) nuts, optional
1. Preheat oven to 180°C (350°F).Line a baking sheet with parchment paper.
2. In a medium bowl beat butter and sugar until creamy, then add eggs, lemon zest and vanilla extract. Stir well.
3. Add baking powder and flour and mix until well blended. Stir in dried fruits.
4. Pour the dough into one long loaf or 2 smaller loafs into the prepared baking tray. The dough is pretty sticky so you can wet your spatula or use flour to be able to give the right shape.
5. Bake for about 25 minutes, remove from the oven and let cool for about 30 minutes. Cut into 1/2 inch diagonal slices and place them on the baking tray. Bake for another 15-17 minutes until golden brown.

Caramelised nuts (or candied nuts) are great as snacks, especially for kids! But they are also used widely as decorations for cakes/cookies etc.

▶Candied Nuts◀
Almond or any other types of nuts 125g
Sugar 40g
Water 10g
Butter 5g
① Add water + sugar into the saucepan and raise the temp to 115℃ to make a sugar syrup.
② Add in the nuts and mix well.
③ The sugar will crystallise over the nuts - keep mixing it with your spatula and the crystallised sugar will turn into caramel.
④ Turn the heat off when you have the perfect brown colour coated on the nuts.
⑤ Add the butter and mix well.
⑥ Place it on a silicone mat/parchment paper and let it cool at room temp.
Storage: Can store in an air-tight container in the fridge for a month.
