How To make Sugared Almond Sticks
1/2 c Blanched almonds
2 tb Sugar
1 c All purpose flour; sifted
1/3 c Sugar
1/4 ts Salt
1/2 c Butter or margarine
1 Egg yolk
1/4 ts Almond extract
1 Slightly beaten egg white
Recipe by: From the book Butterfingers Grind almonds in blender. Mix 2 tbs almonds with 2 tbs sugar and set aside. Combine remaining almonds, flour, 1/3 cup sugar and salt. Cut in butter until mixture resembles coarse crumbs. Add eg gyolk and almond extract; mix well. Divide dough into six portions on lightly floured surface. With floured hands, roll each portion into a rope 12" long. Brush tops generously with egg white. Sprinkle with reserved almond-sugar mixture. Cut each strip into cookies 2 inches long. Place on-inch apart on ungreased cookie
sheet. Bake at 350 for 14-15 minutes. Cool 5 minutes before removing. Makes 3 dozen sticks. JM -----

BETH’S PLUOT SUNDAES WITH ALMOND BRITTLE
Serves 6-8
INGREDIENTS:
8 medium ripe pluots
¼ cup (50 g) sugar
1/3 cup (80 ml) water
1 tsp ( 5 ml) almond extract
FOR BRITTLE
1 cup (200 g) sugar
1 cup (150 g) sliced blanched almonds
TO ASSEMBLE
Vanilla ice cream
Store bought cookies of choice
METHOD:
FOR BRITTLE:
Grease a baking sheet with butter and set aside.
Heat sugar in a non-stick large skillet on medium high. DO NOT WALK AWAY! Watch the sugar until it begins to melt and dissolve. Then start to turn the pan allowing it to dissolve further. To help it along you can use a heat safe spatula to stir it.
Once sugar is all dissolved, turn off flame, add almonds and stir to coat. Transfer mixture to baking sheet to harden. Once cooled, place brittle in a plastic bag, and whack with a rolling pin to crush it a bit. Transfer to a bowl, and cover until ready to serve.
FOR PLUOT SAUCE:
Slice pluots in half and remove the pits with a melon baller or spoon. Slice into wedges.
Place fruit in a large sauce pan. Add sugar and water. Cover and heat on medium high until boiling. Remove lids and allow water to evaporate and thicken fruit mixture. If mixture looks to dry, keep adding water for desired sauciness.
Once fruit is firm and sauce has thickened. Remove from flame and stir in almond extract (or Amaretto liquor great too!)
Scoop 1-2 scoops of vanilla ice cream into a “fancy” glass, margarita glasses work well for this!
Spoon pluot mixture over ice cream, top with almond brittle, serve with your favorite “fancy” cookies or shortbreads.

Dried Fruit Biscotti Recipe
Dried Fruit Biscotti are absolutely wonderful for morning hot tea or coffee. These are made with dried cranberries, plums, apricots and raisins that bring an amazing taste.

Ingredients
Makes about 25 biscotti
1 stick (110g) butter, room temperature
1/2 cup (100g) sugar
2 eggs
1 1/2 tsp (6g) baking powder
Finely grated zest of 1 lemon
1 tsp (5g) vanilla extract
1 cup mix of dried fruits (cranberries, plums, apricots and raisins)
1 1/4 cup (160g) all-purpose flour
1/2 cup (50g) nuts, optional
1. Preheat oven to 180°C (350°F).Line a baking sheet with parchment paper.
2. In a medium bowl beat butter and sugar until creamy, then add eggs, lemon zest and vanilla extract. Stir well.
3. Add baking powder and flour and mix until well blended. Stir in dried fruits.
4. Pour the dough into one long loaf or 2 smaller loafs into the prepared baking tray. The dough is pretty sticky so you can wet your spatula or use flour to be able to give the right shape.
5. Bake for about 25 minutes, remove from the oven and let cool for about 30 minutes. Cut into 1/2 inch diagonal slices and place them on the baking tray. Bake for another 15-17 minutes until golden brown.
