- 1 1/2 cups self rising flour

Ingredients:
2/3 cup of mashed Sweet Potatoes (we baked 2 sweet potatoes to use)
1/3 cup of unsweetened Pea Protein Milk or unsweetened Soy Milk
1 Tsp Apple Cider Vinegar
1.5 cups of Whole Wheat Pastry Flour
2 Tbsp Sugar (Cane or Coconut)
1 Tbsp Baking Powder
1 Tsp Salt
5 Tbsp of very cold Coconut Oil

Quick Leftover Makeover Sweet Potato Biscuits
What can you do with leftover sweet potatoes? They make great baby food, but how about using them to make sweet potato biscuits? Watch this yummy video recipe for more...
Sweet potatoes have no fat or cholesterol and are high in vitamin A, which makes it a very healthy food for adults. But it's also a terrific food for baby. Grown-ups can eat it with the skin on but peel the skins for baby's delicate system. Have leftover baked sweet potatoes? Use as a base for these scrumptious biscuits.
Utensil:
10 or 12 Electric Oil Core Skillet
Large bowl
Parchment paper
Yield:
10 to 12 servings, 1 biscuit each
Ingredients:
¾ cups whole wheat flour
¾ cups white flour
4 ½ teaspoons baking powder (22.5 mL)
¾ teaspoon cinnamon (3.7 mL)
¾ teaspoon nutmeg (3.7 mL)
¾ teaspoon ginger (3.7 mL)
1 tablespoon butter (mL)
¾ cup sweet potato, cooked and mashed
¼ cup milk (60 mL)
Directions:
1. Combine all dry ingredients, the first six ingredients, in a large bowl.
2. Add butter to dry ingredients and blend with a fork, the Saladmaster Kork does a great job with this task.
3. Add sweet potato and blend again with a fork.
4. Add milk and blend again with a fork.
5. Place dough on parchment paper and roll into a log-like shape. At this stage can refrigerate for 15 minutes for easier cutting.
6. If using EOC line the bottom with parchment paper and preheat to 325°F/163°C (or heat oven to 375°F/191°C)
7. Cut log into ½ inch slices.
8. Place biscuits into Electric Oil Core Skillet @325 degrees , cover and cook for approximately 15-20 minutes . (if using oven, bake at at 350 degrees with biscuits on a cookie sheet and cook for 10 to 15 minutes. Use the toothpick in the same manner to determine doneness).
9. When toothpick is placed in center of biscuit comes out clean the biscuits are done.
Nutrition information per serving: 99 calories, 3g fat, 2g saturated fat, 8mg cholesterol, 191g sodium, 16g carbohydrate, 1g dietary fiber, 2g sugar, 2g protein
Tips:
* A butter alternative, such as Earth Balance or Vegan Butter, can be substituted for real butter.
* Almond or soy milk can be substituted for milk.
* Serve with homemade apple-butter -- delicious!
* When using mashed sweet potatoes this is a wonderful baby food dish.
* Can add a pinch of cinnamon, mashed apple or yogurt. NOTE: Only add one new food at a time to baby's diet to determine if there's any food allergies.
