1 c Sugar 1 c Butter or shortening 1 Egg 2 c Flour 1/2 ts Salt 1 ts Baking powder 1 ts Vanilla 1 ts Butter flavoring Blend butter and sugar. Add egg and beat well. Add dry ingredients and blend well. Roll into 1" rolls and place in waxed paper, chill in refrigerator until firm. Slice into 1/2" slices. Sprinkle top with sugar and a dash of nutmeg. Bake at 350~F for 10-12 min. I made these vegan maple pecan cookies after buying another huge bottle of maple syrup (thank the gods for Kirkland Signature!). I adapted this recipe from Miyoko Schinner's Chocolate Polenta Puffs. They're very easy and relatively quick to make; the lengthiest part is rolling each cookie. They're also highly customisable; let your imagination run riot!
