1 c Sugar 1 c Butter or shortening 1 Egg 2 c Flour 1/2 ts Salt 1 ts Baking powder 1 ts Vanilla 1 ts Butter flavoring Blend butter and sugar. Add egg and beat well. Add dry ingredients and blend well. Roll into 1" rolls and place in waxed paper, chill in refrigerator until firm. Slice into 1/2" slices. Sprinkle top with sugar and a dash of nutmeg. Bake at 350~F for 10-12 min. Chewy Pecan Cookies Preheat oven to 350° ½ cup creamy almond butter (I used almond butter from the bulk section at Central Market, Eastwind Almond Butter) 2 tablespoons turbinado sugar, organic cane sugar, or date sugar (I used turbinado sugar in the video) 6 tablespoons maple syrup or date syrup (I used maple syrup) 1 tablespoon ground flax meal 1 teaspoon ground cinnamon ¼ teaspoon kosher salt ½ cup rolled oats ½ cup crispy brown rice cereal 3/4 cup pecans, processed to a crumbly texture in the food processor
Stir the almond butter, sugar, maple syrup, flax meal, cinnamon and salt in a large bowl. Add the oatmeal, brown rice cereal, and pecans. Mix well until combined thoroughly. Use a 2 tablespoon size scoop, packing the mixture tightly, to divide mixture into 16 equal portions and place them on a parchment lined baking sheet. With wet fingers, press down on the balls until they are ½ inch thick. Place a pecan half on each cookie. Dipping the pecan half in maple or date syrup will help it stick to the top of the cookie. Bake for 9-10 minutes. 9 minutes will produce a softer chewier cookie and by 10 minutes it will be a little crispy. Let them cool on the sheet pan for a few minutes before transferring to a wire rack.
