CHOCOLATE BROWNIES gluten-free and sugar-free recipe
for 20x15cm baking dish:
180g chocolate (I use 72%)
100g butter
90g of sugar substitute or sugar (I use mix Monk Fruit Extract & Erythritol)
3 eggs
1 tsp. ground coffee
2 tsp. vanilla extract
90g almond flour
100g pecans + 25g on top
2 pinches of salt (I use Fleur-de-Sel)
PROCESS:
Preheat oven to 355ºF / 180ºC.
Melt the chocolate and butter over a slightly boiling water (cut everything into pieces in advance). Remove from heat, let cool a little.
Using a mixer beat eggs with sugar until light and fluffy. Add warm chocolate, coffee, vanilla extract and mix well. Stir in almond flour and chopped pecans.
Pour it into a pan lined with parchement paper. Sprinkle chopped pecans on top and a little bit of salt.
Bake for 20-25 minutes.
Let it cool slightly in the pan, then take it out along with the paper and leave to cool completely.
When it cools down, cut into squares. Bon appetit!

Ingredients:
3/4 cup peanut butter (180 ml)
1/2 - 3/4 cup coconut/brown sugar* (120 - 180 ml) (depending on how sweet you want the brownies to be)
1/3 cup maple syrup (80 ml)
3 eggs
optional: 2 teaspoons vanilla extract
1/2 cup unsweetened cacao powder (120 ml)
1/2 cup almond flour (120 ml)
1/2 teaspoon baking powder
pinch of salt
1/2 cup dark chocolate chunks (80 g) (I used 80% dark chocolate)
1. Mix peanut butter, coconut sugar, maple syrup, eggs and vanilla together
2. Add the cacao powder, flour, baking powder and salt and stir until combined
3. Fold in the chocolate chips
4. Pour into a baking dish lined with parchment paper. Bake at 180 Celsius degrees (350 in Fahrenheit) for about 12 - 15 minutes, depending on how gooey you want your brownies to be
*If you are on the elimination phase of the low-FODMAP diet, I recommend using brown sugar instead of coconut sugar because coconut sugar is high-FODMAP
